🍽️ Crispy Fish Balls with Fresh Apple-Horseradish Dip

Ingredients
- cod, frozen 600 g
- salt pinch
- onions, yellow 1 pc.
- parsley, fresh 20 g
- garlic cloves 1 pc.
- lemons 1 pc.
- rolls 1 pc.
- eggs 1 pc.
- breadcrumbs 80 g
- pepper, black ground pinch
- sunflower oil 3 tbsp
- apples, red 1 pc.
- dill, fresh 20 g
- sour cream 200 g
- horseradish cream 2 tsp
- sugar pinch
Instructions
- 1. Let the frozen cod thaw overnight in the refrigerator.
- 2. Rinse the thawed fish under cold water and pat it completely dry with kitchen paper.
- 3. Bring about 1 liter of salted water to a boil in a pot.
- 4. Add the cod fillet to the boiling water and cook it for approx. 10 minutes.
- 5. Halve an onion and peel it.
- 6. Cut the onion into fine cubes.
- 7. Wash fresh parsley and shake it dry.
- 8. Pluck the parsley leaves from the stems.
- 9. Chop the parsley leaves coarsely.
- 10. Peel a clove of garlic and cut it finely.
- 11. Halve a lemon.
- 12. Squeeze the lemon.
- 13. Remove the cooked fish from the water and let it cool down briefly.
- 14. Place bread rolls in a bowl.
- 15. Pour the hot cooking water over the bread rolls.
- 16. Break up the cooled fish with a fork.
- 17. Drain the water from the bowl with the bread rolls.
- 18. Squeeze the bread rolls well to remove excess moisture.
- 19. Add the broken-up fish to the bowl.
- 20. Add an egg to the bowl.
- 21. Add 3 tablespoons of breadcrumbs to the bowl.
- 22. Add the diced onion to the bowl.
- 23. Add the finely cut garlic to the bowl.
- 24. Add 2 tablespoons of lemon juice to the bowl.
- 25. Add the chopped parsley to the bowl.
- 26. Mix all ingredients in the bowl well together.
- 27. Season the mixture with salt and pepper.
- 28. Let the fish mixture swell for approx. 5 minutes.
- 29. Form patties from the mixture with a diameter of approx. 5 cm.
- 30. Place 50 g of breadcrumbs on a deep plate.
- 31. Roll the patties in the breadcrumbs.
- 32. Heat oil in a pan.
- 33. Fry the patties for approx. 10 minutes on both sides until golden brown.
- 34. Wash an apple.
- 35. Quarter the apple.
- 36. Remove the core from the apple quarters.
- 37. Grate the apple finely.
- 38. Wash fresh dill.
- 39. Dry the dill.
- 40. Pluck the dill tips.
- 41. Chop the dill tips finely.
- 42. Add the grated apple to a bowl.
- 43. Add the chopped dill to the bowl.
- 44. Add sour cream to the bowl.
- 45. Add horseradish cream to the bowl.
- 46. Mix the dip ingredients in the bowl.
- 47. Season the dip with salt, pepper, and sugar.
- 48. Serve the dip together with the fish patties.
