🍽️ Cod and Shrimp in Asparagus Paper Parcels

Ingredients
- Cod, frozen 600 g
- Shrimp cooked, frozen 250 g
- green asparagus 2 bunch
- Organic lemons 1 pc.
- Honey 2 tsp
- Salt pinch
- Pepper, black ground pinch
- Olive oil 2 tbsp
- Baguette 1 pc.
Instructions
- 1. Thaw the cod and shrimp overnight in the refrigerator.
- 2. Preheat the oven to 200 degrees Celsius (convection mode).
- 3. Rinse the green asparagus thoroughly.
- 4. Peel the bottom third of the asparagus stalks.
- 5. Snap off the woody ends of the asparagus stalks.
- 6. Cut the lemon in half.
- 7. Squeeze the juice from one half of the lemon.
- 8. Slice the other half of the lemon into thin slices.
- 9. Rinse the cod and shrimp under cold water.
- 10. Pat the fish and shrimp dry with a kitchen towel.
- 11. Pour the lemon juice into a small bowl.
- 12. Mix the lemon juice with honey, salt, and pepper.
- 13. Drizzle the marinade evenly over the cod and shrimp.
- 14. Divide the baking paper into four equal pieces.
- 15. Place the asparagus stalks on the baking paper pieces.
- 16. Drizzle olive oil over the asparagus.
- 17. Season the asparagus with a pinch of salt.
- 18. Place the lemon slices on top of the asparagus.
- 19. Distribute the marinated cod and shrimp over the asparagus.
- 20. Fold the edges of the baking paper over the filling to close the packets.
- 21. Place the packets on a baking sheet.
- 22. Cook the packets in the preheated oven for about 18 minutes.
- 23. Serve the fish packets together with fresh baguette.
