  3. 3. Wash the lemon with hot water and finely grate about one teaspoon of zest.
  4. 4. Rinse the herbs thoroughly and dry them well.
  5. 5. Pluck the leaves from the stems and chop them finely.
  6. 6. Trim the crusts from the toast bread and chop the bread finely as well.
  7. 7. In a bowl, mix the lemon zest, herbs, toast, and soft butter together.
  8. 8. Season the mixture with salt and pepper to taste.
  9. 9. Rinse the cod and pat it dry with paper towels.
  10. 10. Season the fish with salt and pepper as well.
  11. 11. Brush a baking dish with olive oil.
  12. 12. Place the fish fillets side by side in the dish.
  13. 13. Spread mustard over the fish.
  14. 14. Distribute the herb crust evenly over the fish.
  15. 15. Bake the fish in the oven for about 15 minutes.
