🍽️ Cod with Crispy Herb Crust

Ingredients
- cod, frozen 600 g
- lemons 1 pc
- parsley, fresh 10 g
- thyme, fresh 5 g
- toast bread 4 slices
- butter 4 tbsp
- salt pinch
- pepper, black ground pinch
- olive oil 1 tbsp
- mustard 1 tsp
Instructions
- 1. Thaw the cod in the refrigerator overnight if possible.
- 2. Preheat the oven to 200 degrees Celsius with fan setting.
- 3. Wash the lemon with hot water and finely grate about one teaspoon of zest.
- 4. Rinse the herbs thoroughly and dry them well.
- 5. Pluck the leaves from the stems and chop them finely.
- 6. Trim the crusts from the toast bread and chop the bread finely as well.
- 7. In a bowl, mix the lemon zest, herbs, toast, and soft butter together.
- 8. Season the mixture with salt and pepper to taste.
- 9. Rinse the cod and pat it dry with paper towels.
- 10. Season the fish with salt and pepper as well.
- 11. Brush a baking dish with olive oil.
- 12. Place the fish fillets side by side in the dish.
- 13. Spread mustard over the fish.
- 14. Distribute the herb crust evenly over the fish.
- 15. Bake the fish in the oven for about 15 minutes.
- 16. Remove the fish from the oven and serve it.
