🍽️ Classic Beef Wellington

Ingredients
- onions, yellow 1 pc.
- mushrooms, white 400 g
- parsley, fresh 1 bunch
- beef fillet, whole 800 g
- salt pinch
- pepper, black ground pinch
- oil 5 tbsp
- puff pastry 1 pc.
- Black Forest ham 6 slices
- mustard 1 tbsp
Instructions
- 1. Cut the onion in half and peel it. Finely chop the onion. Clean the mushrooms if necessary with a kitchen towel and dice them into small cubes. Wash the parsley, shake it dry, and remove the thick stems. Finely chop the parsley. Wash the beef fillet and season it generously with salt and pepper.
- 2. Heat 2 tablespoons of oil in a pan over high heat. Sear the beef fillet for about 10 minutes on all sides. Remove the meat from the pan and reheat the pan.
- 3. Add 3 tablespoons of oil to the hot pan. Fry the mushrooms together with the onion for about 10 minutes until no more liquid escapes. Stir in the parsley and season the mixture with salt and pepper. Transfer the mushroom mixture to a bowl and let it cool.
- 4. Preheat the oven to 180 degrees Celsius (top and bottom heat). Roll out the puff pastry on a work surface. Cover the puff pastry with ham, leaving a border of about 5 centimeters. Spread some of the cooled mushroom mixture onto the ham and place the beef fillet on top. Brush the fillet with mustard and wrap it with the remaining mushroom mixture. Fold the puff pastry over the fillet and place it seam-side down on a baking sheet lined with baking paper. Bake the Beef Wellington for about 20 minutes until golden brown. Enjoy!
