🍽️ Creamy Feta Tomato Pasta Soup

Ingredients
- yellow onions 1 pc.
- garlic cloves 1 pc.
- olive oil 2 tbsp.
- tomato paste 2 tbsp.
- tomatoes, chopped 400 g
- vegetable broth 600 ml
- Kritharaki pasta 100 g
- salt 0.25 tsp.
- pepper, black ground 0.25 tsp.
- oregano, dried 1 tsp.
- feta 200 g
Instructions
- 1. Heat a pot on the stove.
- 2. Peel one onion and one clove of garlic.
- 3. Cut the onion and garlic into very small cubes.
- 4. Add olive oil to the hot pot.
- 5. Fry the onion and garlic cubes for two to three minutes.
- 6. Stir tomato paste into the pot.
- 7. Fry the tomato paste for one minute.
- 8. Add canned tomatoes and vegetable broth to the pot.
- 9. Season the mixture with salt, pepper, and oregano.
- 10. Bring the soup to a boil.
- 11. Cook the soup for one to two minutes.
- 12. Add pasta to the boiling soup.
- 13. Cook the pasta until done, according to the package instructions.
- 14. Crumble feta cheese roughly with your hands.
- 15. Add the feta cheese to the finished soup.
