  1. 1. Heat 1 teaspoon of olive oil in a frying pan over medium-high heat.
  2. 2. Roast the pine nuts for about 3 minutes until golden brown, shaking the pan regularly.
  3. 3. Remove the nuts from the pan and place them on a plate to cool down.
  4. 4. Wash the mint thoroughly and shake it dry.
  5. 5. Pluck the mint leaves from the stems.
  6. 6. Finely chop about half of the mint leaves.
  7. 7. Mix balsamic vinegar, honey, and 2 tablespoons of olive oil well together in a bowl.
  8. 8. Season the marinade with salt and pepper to taste.
  9. 9. Gently pat the feta with kitchen paper to remove excess moisture.
  10. 10. Cut the feta into 16 equal cubes.
  11. 11. Add the feta cubes, the cooled pine nuts, and the chopped mint to the marinade.
  12. 12. Mix all ingredients well in the marinade so they are evenly coated.
  13. 13. Wash the cherry tomatoes thoroughly.
  14. 14. Take the feta cubes out of the marinade and let them drain briefly.
  15. 15. Catch the remaining marinade in a small container.
  16. 16. Thread two feta cubes alternately with one cherry tomato and a mint leaf onto a skewer.
  17. 17. Arrange the finished skewers on a plate.
  18. 18. Drizzle the skewers with the collected remaining marinade.
  19. 19. Serve the skewers with baguette.
