🍽️ Feta-Tomato Skewers with Mint and Pine Nuts

Ingredients
- Olive oil 5 tbsp
- Pine nuts 20 g
- Mint, fresh 10 g
- Balsamic vinegar, light 1 tbsp
- Honey 2 tsp
- Salt pinch
- Pepper, black ground pinch
- Feta 200 g
- Cherry tomatoes 250 g
- Baguette 1 pc.
Instructions
- 1. Heat 1 teaspoon of olive oil in a frying pan over medium-high heat.
- 2. Roast the pine nuts for about 3 minutes until golden brown, shaking the pan regularly.
- 3. Remove the nuts from the pan and place them on a plate to cool down.
- 4. Wash the mint thoroughly and shake it dry.
- 5. Pluck the mint leaves from the stems.
- 6. Finely chop about half of the mint leaves.
- 7. Mix balsamic vinegar, honey, and 2 tablespoons of olive oil well together in a bowl.
- 8. Season the marinade with salt and pepper to taste.
- 9. Gently pat the feta with kitchen paper to remove excess moisture.
- 10. Cut the feta into 16 equal cubes.
- 11. Add the feta cubes, the cooled pine nuts, and the chopped mint to the marinade.
- 12. Mix all ingredients well in the marinade so they are evenly coated.
- 13. Wash the cherry tomatoes thoroughly.
- 14. Take the feta cubes out of the marinade and let them drain briefly.
- 15. Catch the remaining marinade in a small container.
- 16. Thread two feta cubes alternately with one cherry tomato and a mint leaf onto a skewer.
- 17. Arrange the finished skewers on a plate.
- 18. Drizzle the skewers with the collected remaining marinade.
- 19. Serve the skewers with baguette.
