🥗 Oven Potatoes with Feta and Crunchy Orange Walnut Salad

Ingredients
- potatoes, mainly waxy 1 kg
- oil 6 tbsp
- salt pinch
- oranges 4 pcs.
- thyme, stripped 1 tsp
- honey 1 tbsp
- pepper, black ground pinch
- sugar 1 tbsp
- butter 1 tbsp
- walnut kernels 4 tbsp
- feta 500 g
- salad mix 400 g
Instructions
- 1. Preheat the oven to 220 degrees Celsius with top and bottom heat.
- 2. Wash the potatoes thoroughly.
- 3. Cut the potatoes into slices about two centimeters thick.
- 4. Place the potato slices in a bowl.
- 5. Add two tablespoons of oil and some salt.
- 6. Mix everything well so the slices are evenly coated.
- 7. Arrange the potato slices flat on a baking sheet.
- 8. Place the tray on the lowest rack.
- 9. Bake the potatoes for about 18 to 20 minutes.
- 10. Wash the bowl immediately afterwards.
- 11. Wash the oranges under running water.
- 12. Take two oranges and cut them in half.
- 13. Squeeze the juice from these two halves.
- 14. Take the remaining oranges.
- 15. Peel them completely using a sharp knife.
- 16. Remove the white skin under the peel as well.
- 17. Cut the fruits in a V-shape along the membranes.
- 18. This releases the individual fruit segments.
- 19. Catch the juice that comes out as well.
- 20. Pour the collected orange juice into a pot.
- 21. Heat the juice.
- 22. Add thyme.
- 23. Let the mixture simmer for about three minutes.
- 24. The juice should thicken slightly.
- 25. Remove the pot from the heat.
- 26. Stir in honey.
- 27. Add four tablespoons of oil.
- 28. Whisk the oil in with a whisk.
- 29. Season with salt, pepper, and sugar.
- 30. Set the bowl aside to let the dressing cool down.
- 31. Put one tablespoon of oil and one tablespoon of butter into a pan.
- 32. Heat the pan on medium heat.
- 33. Add the walnuts to the pan.
- 34. Roast the nuts until golden brown for two to three minutes.
- 35. Shake the pan occasionally while doing so.
- 36. Add one tablespoon of sugar.
- 37. Keep stirring constantly.
- 38. Let the sugar caramelize for about one minute.
- 39. Remove the nuts from the pan.
- 40. Place them on a plate.
- 41. Let the nuts cool down.
- 42. Take the feta cheese.
- 43. Crumble the cheese roughly with your hands.
- 44. Take the potatoes out of the oven.
- 45. Distribute the feta evenly over the potatoes.
- 46. Salt the potatoes lightly.
- 47. Place the tray in the upper third of the oven.
- 48. Bake everything for another seven to nine minutes.
- 49. Wash the salad.
- 50. Spin the salad dry thoroughly.
- 51. Put the salad into a bowl.
- 52. Add the cooled orange dressing.
- 53. Toss the salad with the dressing.
- 54. Take the finished potatoes out of the oven.
- 55. Place the orange segments on the plates.
- 56. Add the salad.
- 57. Place the potatoes with feta on the plates.
- 58. Garnish the dish with the walnuts.
