🍽️ Sesame-crusted Feta with Roasted Vegetables and Smashed Potatoes

Ingredients
- small potatoes, mostly waxy 1 kg
- salt pinch
- rosemary, fresh 5 g
- thyme, fresh 10 g
- zucchini 1 pc.
- vine tomatoes 4 pc.
- onions, red 2 pc.
- pepper, black ground pinch
- olive oil 6 tbsp
- wheat flour, Type 405 2 tbsp
- rose pepper 0.5 tsp
- eggs 1 pc.
- sesame, white 6 tbsp
- feta 400 g
Instructions
- 1. Preheat the oven to 220 degrees Celsius with fan setting.
- 2. Thoroughly wash the small potatoes.
- 3. Place the potatoes in a pot with salted water.
- 4. Bring the water to a boil.
- 5. Cook the potatoes covered for about 12 minutes until soft.
- 6. Wash the rosemary and pat it dry.
- 7. Strip the rosemary needles from the stems.
- 8. Finely chop the needles.
- 9. Wash the thyme and dry it as well.
- 10. Cut the zucchini in half lengthwise.
- 11. Trim the ends of the zucchini.
- 12. Slice the zucchini into rounds.
- 13. Cut the tomatoes into quarters.
- 14. Remove the stems from the tomatoes.
- 15. Cut the onions in half.
- 16. Peel the onions.
- 17. Cut the onions into quarters.
- 18. Separate the onion layers.
- 19. Place the prepared vegetables in a bowl.
- 20. Add the thyme to the vegetables.
- 21. Season with salt and pepper.
- 22. Add 2 tablespoons of olive oil.
- 23. Mix everything well together.
- 24. Line a baking tray with baking paper.
- 25. Spread the vegetables evenly on the tray.
- 26. Roast the vegetables in the oven for about 25 minutes.
- 27. Take the cooked potatoes out of the pot.
- 28. Drain the water.
- 29. Place the potatoes on a second baking tray lined with baking paper.
- 30. Gently mash the potatoes with a fork or a potato masher.
- 31. Ensure the potatoes crack open but still hold together.
- 32. Sprinkle the chopped rosemary over the potatoes.
- 33. Drizzle 2 tablespoons of olive oil over the potatoes.
- 34. Season the potatoes generously with salt and pepper.
- 35. Roast the potatoes in the oven for about 15 minutes.
- 36. Place flour and paprika powder on one plate.
- 37. Whisk 1 egg on a second plate.
- 38. Put sesame seeds on a third plate.
- 39. Cut the feta into two equal pieces.
- 40. Roll one piece of feta first in the flour and egg mixture.
- 41. Repeat the process for the second piece.
- 42. Then roll the feta pieces thoroughly in the sesame seeds.
- 43. Heat 2 tablespoons of olive oil in a pan over medium heat.
- 44. Fry the feta on all sides for about 4 minutes until golden brown.
- 45. Let the feta drain on kitchen paper.
- 46. Take the potatoes and vegetables out of the oven.
- 47. Plate the vegetables and potatoes.
- 48. Serve the sesame feta alongside.
