🍽️ Fennel-Orange Quiche with Walnuts

Ingredients
- butter 125 g
- wheat flour, Type 405 300 g
- eggs 3 pcs
- salt pinch
- water 5 tbsp
- fennel 1 pcs
- thyme, fresh 10 g
- oranges 1 pcs
- oil 2 tbsp
- pepper, white ground pinch
- whipping cream 200 g
- Emmentaler grated 150 g
- walnut kernels 4 tbsp
- sugar 1 tsp
Instructions
- 1. Preheat the oven to 220 degrees Celsius using top and bottom heat.
- 2. Cut the cold butter into small cubes.
- 3. Place the butter cubes, flour, one egg, salt, and cold water into a bowl.
- 4. Knead the ingredients together by hand until you have a smooth dough.
- 5. Sprinkle some flour onto your work surface.
- 6. Roll out the dough evenly to a thickness of about 2 millimeters.
- 7. Grease a tart pan.
- 8. Place the dough into the pan.
- 9. Press the dough firmly against the bottom and sides.
- 10. Trim the excess edges straight with a knife.
- 11. Prick the base several times with a fork.
- 12. Place the quiche dough in the refrigerator to chill.
- 13. Wash the fennel thoroughly.
- 14. Quarter the fennel.
- 15. Cut the fennel into very thin strips.
- 16. Wash the thyme.
- 17. Dry the thyme well.
- 18. Pluck the thyme leaves from the stems.
- 19. Peel the orange using a sharp knife.
- 20. Remove all the white pith completely.
- 21. Cut out the orange segments with V-shaped cuts.
- 22. Separate the fillets from the orange carefully.
- 23. Heat some oil in a pan over medium heat.
- 24. Add the fennel to the pan.
- 25. Sweat the fennel for about 3 to 4 minutes.
- 26. Season the fennel with salt and pepper.
- 27. Place the cream, remaining eggs, and Emmental cheese into a bowl.
- 28. Whisk the ingredients well together.
- 29. Add the fennel to the mixture.
- 30. Add the orange fillets to the mixture.
- 31. Add the thyme to the mixture.
- 32. Season the filling generously with salt and pepper.
- 33. Distribute the mixture evenly over the quiche dough.
- 34. Bake the quiche in the lower part of the oven.
- 35. Bake the quiche for about 25 to 30 minutes.
- 36. Clean the pan.
- 37. Heat the pan over medium heat.
- 38. Roast the walnuts for about 2 minutes.
- 39. Add the sugar to the walnuts.
- 40. Let the sugar caramelize briefly.
- 41. Let the walnuts cool down.
- 42. Chop the walnuts coarsely.
- 43. Let the quiche cool down slightly.
- 44. Garnish the quiche with the caramelized walnuts.
