  1. 1. Drain the beetroot in a sieve. Halve two figs, scoop out the flesh and chop it. Wash the remaining figs, cut them and quarter them. Cut the Camembert into about 16 cubes.
  2. 2. In a bowl, mix sour cream, mustard, and honey well, fold in the fig flesh, and season with salt and pepper.
  3. 3. Quarter the pumpernickel rounds, top them with beetroot and fig slices, spread the fig-mustard cream on top, and place a Camembert cube on each. Enjoy your meal!
