Ingredients
- egg whites 4 pcs
- salt pinch
- sugar 200 g
- vanilla extract 2 tsp
- cornstarch 1 tsp
- heavy cream 200 g
- sour cream 200 g
- figs 6 pcs
- pistachios 60 g
- baking chocolate, dark 20 g
Instructions
- 1. Preheat the oven to 190 degrees Celsius with top and bottom heat.
- 2. Whip the egg whites together with a pinch of salt until stiff.
- 3. Stir in the sugar slowly and continue whipping until the sugar has completely dissolved.
- 4. This process takes about 8 to 10 minutes.
- 5. Add 1 teaspoon of vanilla extract to the meringue and sift in the starch.
- 6. Mix the ingredients briefly with a spatula.
- 7. Spread the meringue mixture in a slightly wavy pattern onto baking paper.
- 8. Reduce the oven temperature to 110 degrees Celsius with top and bottom heat.
- 9. Bake the meringue base for 40 to 45 minutes until it is dry.
- 10. Whip the cream together with 1 teaspoon of vanilla extract until almost stiff.
- 11. Stir the sour cream into the whipped cream.
- 12. Spread the finished cream onto the cooled meringue base.
- 13. Wash the figs and cut them into wedges.
- 14. Chop the pistachios coarsely.
- 15. Melt the chocolate coating in the microwave or over a water bath.
- 16. Distribute the melted chocolate coating over the cream.
- 17. Decorate the dessert with the fig wedges and the pistachios.
- 18. Grate small curls from dark chocolate coating over the top if desired.
