🍽️ Falafel Burgers with Herb Yogurt and Red Cabbage

Ingredients
- chickpeas 300 g
- parsley, fresh 15 g
- coriander, fresh 15 g
- garlic cloves 2 pcs
- shallots 1 pcs
- cumin 1 tsp
- salt pinch
- chili flakes pinch
- breadcrumbs 3 tbsp
- dill, fresh 10 g
- soy yogurt 150 g
- mini cucumbers 4 pcs
- red cabbage, fresh 100 g
- white wine vinegar 1 tbsp
- sugar 1 tsp
- hamburger buns 4 pcs
Instructions
- 1. Pour the chickpeas into a sieve and let them drain well.
- 2. Wash the parsley and coriander, shake them dry, and remove the thick stems.
- 3. Roughly chop the parsley and coriander.
- 4. Peel the garlic and chop it roughly.
- 5. Halve the shallot, peel it, and chop it roughly.
- 6. Place the chickpeas, chopped vegetables, cumin, salt, and chili flakes into a tall container.
- 7. Blend the mixture until smooth.
- 8. Stir the breadcrumbs into the mixture.
- 9. Lightly wet your hands.
- 10. Shape four burger patties from the mixture.
- 11. Wash the dill and shake it dry.
- 12. Finely chop the dill.
- 13. Place the soy yogurt into a bowl.
- 14. Stir the chopped dill and a pinch of salt into the yogurt.
- 15. Wash the cucumber and dry it.
- 16. Slice the cucumber lengthwise into thin strips.
- 17. Shred the red cabbage into very fine strips.
- 18. Place the red cabbage, vinegar, sugar, and a pinch of salt into a bowl.
- 19. Knead the red cabbage with your hands for two to three minutes.
- 20. Preheat the grill.
- 21. Grill the burger patties for three to four minutes per side until crispy.
- 22. Top the burger buns with the red cabbage.
- 23. Place the grilled falafel patties on top.
- 24. Distribute the herb yogurt and cucumber slices over the burgers.
