  4. 4. Wash the lemon and grate about one teaspoon of the zest.
  5. 5. Cut the lemon in half and squeeze out the juice.
  6. 6. Peel the garlic and chop it roughly.
  7. 7. Halve the shallots, peel them, and dice them finely.
  8. 8. Put the chickpeas, parsley, shallots, garlic, lemon zest, two tablespoons of lemon juice, and the flour into a tall container.
  9. 9. Blend the ingredients thoroughly into a mixture.
  10. 10. Season the mixture with salt and pepper.
  11. 11. Chill the chickpea mixture.
  12. 12. Mix the crème fraîche with curry, a splash of lemon juice, and salt in a bowl.
