  1. 1. Place the chickpeas in a colander and let the water drain well.
  2. 2. Wash the parsley thoroughly, pat it dry, and remove the thick stems.
  3. 3. Finely chop the parsley.
  4. 4. Rinse the lemon and grate about one teaspoon of the zest.
  5. 5. Cut the lemon in half and squeeze out the juice.
  6. 6. Peel the garlic and roughly crush or chop it.
  7. 7. Halve the shallots, peel them, and chop them finely.
  8. 8. Add the chickpeas, parsley, shallots, garlic, lemon zest, two tablespoons of lemon juice, some flour, salt, and pepper into a tall blending cup.
  9. 9. Blend the ingredients until you have a fine, smooth paste.
  10. 10. Wet your hands with a little water.
  11. 11. Shape the mixture into about twelve flat patties.
  12. 12. Heat oil in a frying pan until it is very hot.
  13. 13. Fry the patties on both sides for about three to four minutes until golden brown.
