🍰 Cardamom Espresso Cookies

Ingredients
- butter 150 g
- Powdered sugar 100 g
- Salt Pinch
- Cardamom, ground 0.5 tsp
- Eggs 1 pc
- Coffee, instant 1 tbsp
- Water 2 tbsp
- Wheat flour, Type 405 150 g
- Fine semolina 50 g
- Baking powder 0.5 tsp
- Chocolate, dark 50 g
Instructions
- 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 2. Beat butter, powdered sugar, a pinch of salt, and ground cardamom in a bowl with a hand mixer until the mixture is creamy and fluffy.
- 3. Add one egg and mix it in well until fully incorporated.
- 4. Dissolve coffee powder in a little water and set the solution aside.
- 5. Gently fold flour, semolina, and baking powder into the butter-sugar mixture.
- 6. Stir the prepared coffee solution into the dough until it is homogeneous.
- 7. Take walnut-sized portions of the dough using two teaspoons.
- 8. Place the dough portions on a baking sheet lined with baking paper, leaving enough space between them.
- 9. Gently press the portions flat.
- 10. Bake the cookies in the preheated oven for about 15 minutes until they are golden brown.
- 11. Chop the chocolate into small pieces.
- 12. Bring about 500 milliliters of water to a boil in a pot.
- 13. Place a metal bowl with the chocolate over the hot water without touching the water, and melt the chocolate gently (bain-marie method).
- 14. Drizzle fine chocolate stripes or patterns onto the cooled cookies using a fork.
- 15. Let the chocolate on the cookies dry completely.
