🍰 Espresso Cherry Brownies

Ingredients
- chocolate, dark 400 g
- butter 500 g
- coffee, instant 2 tbsp
- water 50 ml
- sugar 400 g
- salt pinch
- eggs 8 pcs
- wheat flour, Type 405 120 g
- baking powder 1 tsp
- cocoa powder 160 g
- cherries, fresh 100 g
Instructions
- 1. Preheat your oven to 180 degrees Celsius with top and bottom heat.
- 2. Bring about 500 milliliters of water to a boil in a pot.
- 3. Chop the chocolate into coarse pieces.
- 4. Cut the butter into pieces.
- 5. Place a metal bowl over the pot with the hot water, ensuring it does not touch the bottom of the pot.
- 6. Add the chocolate pieces and the butter to the metal bowl.
- 7. Let the chocolate and butter melt in the hot water bath and stir until you have a smooth mixture.
- 8. Remove the metal bowl from the pot.
- 9. Pour 50 milliliters of boiling water over the ground coffee.
- 10. Let the coffee cool down.
- 11. Take a separate bowl.
- 12. Add the sugar to the bowl.
- 13. Add the salt to the bowl.
- 14. Crack the eggs into the bowl.
- 15. Whisk the sugar, salt, and eggs with a hand mixer until the mixture is thick and creamy.
- 16. Pour the melted chocolate-butter mixture into the egg-sugar mixture.
- 17. Pour the cooled coffee into the bowl.
- 18. Take a third bowl.
- 19. Add the flour to the third bowl.
- 20. Add the baking powder to the third bowl.
- 21. Add 150 grams of cocoa to the third bowl.
- 22. Mix the flour, baking powder, and cocoa in the third bowl.
- 23. Add the dry ingredients gradually to the wet chocolate mixture.
- 24. Stir everything briefly until it is just combined.
- 25. Let the cherries drain well.
- 26. Gently fold the drained cherries into the batter.
- 27. Line a baking pan with baking paper.
- 28. Spread the batter evenly in the lined pan.
- 29. Place the pan in the preheated oven.
- 30. Bake the brownies for about 30 minutes.
- 31. Check if the surface is crispy and the inside is still soft.
- 32. Remove the pan from the oven.
- 33. Let the brownies cool down completely in the pan.
- 34. Cut the cooled brownies into cubes.
- 35. Lightly dust the brownies with cocoa before serving.
