🍽️ Refreshing Summer Salad with Vegan Lemon Soy Yogurt Dressing and Caramelized Cherry Tomatoes

Ingredients
- Mini Romaine 1 pc.
- mixed leaf salad 0.5 pc.
- cherry tomatoes mix 350 g
- lemons 1 pc.
- soy yogurt 5 tbsp
- oil 2 tbsp
- sugar pinch
- salt pinch
- pepper, black ground pinch
- powdered sugar 2 tbsp
Instructions
- 1. Cut the romaine lettuce into strips about 1 cm wide.
- 2. Wash the romaine lettuce and spin it dry.
- 3. Tear the mixed leaf salad into small pieces.
- 4. Wash the mixed leaf salad and spin it dry.
- 5. Wash the cherry tomatoes.
- 6. Wash the lemon.
- 7. Finely grate about 1 teaspoon of lemon zest.
- 8. Cut the lemon in half.
- 9. Squeeze the juice from the lemon.
- 10. Whisk the soy yogurt, lemon zest, 2 tablespoons of lemon juice, and oil together in a bowl.
- 11. Season the dressing with sugar, salt, and pepper to taste.
- 12. Heat a pan over high heat.
- 13. Roast the cherry tomatoes in the pan for about 1 minute on all sides without adding fat.
- 14. Sift powdered sugar over the tomatoes.
- 15. Caramelize the sugar while stirring for about 1 minute.
- 16. Transfer the caramelized cherry tomatoes to a plate and set aside.
- 17. Divide the romaine and mixed leaf salad among deep plates.
- 18. Garnish the salad with the lemon soy yogurt dressing and the caramelized cherry tomatoes.
- 19. Serve the salad and enjoy!
