🍰 Peanut Cake with Dried Fruits

Ingredients
- peanuts, roasted and salted 50 g
- dried plums 50 g
- cranberries, dried 50 g
- raisins 50 g
- peanut butter 80 g
- butter 60 g
- brown sugar 175 g
- vanilla sugar 2 tsp
- eggs 2 pcs
- spelt flour, type 630 250 g
- baking powder 2 tsp
- oat flakes, coarse 60 g
- cinnamon 0.5 tsp
- buttermilk 200 ml
Instructions
- 1. Preheat the oven to 180 degrees Celsius with fan.
- 2. Chop the peanuts and dried fruits into coarse pieces.
- 3. Put the peanut butter, butter, sugar, and vanilla sugar into a large bowl.
- 4. Beat the ingredients with a hand mixer and a whisk until creamy.
- 5. Add the eggs one by one and mix well after each addition.
- 6. Mix the flour, baking powder, oat flakes, and cinnamon in a separate bowl.
- 7. Stir the dry mixture and the buttermilk briefly into the peanut butter mixture.
- 8. Fold the chopped peanuts and dried fruits gently into the batter.
- 9. Pour the batter into a greased loaf pan and smooth the surface.
- 10. Bake the cake in the oven for about 60 minutes.
- 11. Loosely cover the surface of the cake with aluminum foil towards the end of baking time to prevent it from browning too much.
- 12. Let the cake cool completely on a wire rack.
- 13. Carefully remove the cake from the pan.
