  1. 1. Preheat the oven to 160 degrees Celsius with fan.
  2. 2. Beat the soft butter in a bowl with a hand mixer and whisk until creamy.
  3. 3. Add sugar and vanilla sugar and mix for about 3 minutes.
  4. 4. Add the eggs and the peanut butter.
  5. 5. Beat the mixture for approx. 3 minutes until it is nice and creamy.
  6. 6. Gently fold in flour, baking powder, ground almonds and 50 g of chocolate chips.
  7. 7. Distribute the dough with a tablespoon onto two baking sheets.
  8. 8. Form about 5 cm large balls from the dough.
  9. 9. Bake the cookies for approx. 10 to 12 minutes in the oven.
  10. 10. Take the cookies out when they are lightly golden brown.
  11. 11. Melt the remaining chocolate chips over a water bath.
  12. 12. Drizzle the baked cookies with the melted chocolate.
  13. 13. Sprinkle chopped pistachios over them.
  14. 14. Serve the peanut butter cookies lukewarm or cold.
