🍰 Creamy Peanut Butter Cookies

Ingredients
- butter 150 g
- sugar 100 g
- vanilla sugar 2 tsp
- eggs 1 pc.
- peanut butter 150 g
- wheat flour, Type 405 100 g
- baking powder 1 tsp
- almonds, ground 50 g
- chocolate chips 100 g
- pistachios, chopped 100 g
Instructions
- 1. Preheat the oven to 160 degrees Celsius with fan.
- 2. Beat the soft butter in a bowl with a hand mixer and whisk until creamy.
- 3. Add sugar and vanilla sugar and mix for about 3 minutes.
- 4. Add the eggs and the peanut butter.
- 5. Beat the mixture for approx. 3 minutes until it is nice and creamy.
- 6. Gently fold in flour, baking powder, ground almonds and 50 g of chocolate chips.
- 7. Distribute the dough with a tablespoon onto two baking sheets.
- 8. Form about 5 cm large balls from the dough.
- 9. Bake the cookies for approx. 10 to 12 minutes in the oven.
- 10. Take the cookies out when they are lightly golden brown.
- 11. Melt the remaining chocolate chips over a water bath.
- 12. Drizzle the baked cookies with the melted chocolate.
- 13. Sprinkle chopped pistachios over them.
- 14. Serve the peanut butter cookies lukewarm or cold.
