🍰 Strawberry Cake with White and Dark Chocolate Cream

Ingredients
- butter 200 g
- powdered sugar 50 g
- salt pinch
- eggs 1 pc.
- wheat flour, Type 405 250 g
- strawberries 500 g
- chocolate, dark 200 g
- chocolate, white 200 g
- whipping cream 200 g
Instructions
- 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 2. Mix 150 grams of butter, powdered sugar, a pinch of salt, one egg, and flour in a bowl using a hand mixer with dough hooks.
- 3. Stir the ingredients until a smooth shortcrust pastry dough forms.
- 4. Place the dough in the refrigerator for further processing.
- 5. Grease a cake or tart pan with the remaining butter.
- 6. Place the dough between two sheets of baking paper and roll it out into a circle using a rolling pin.
- 7. Place the rolled-out dough into the pan and press up a crust edge of about 2 cm high.
- 8. Cover the dough base with fresh baking paper.
- 9. Fill the baking paper with dried legumes such as peas or beans to use as pie weights.
- 10. Bake the base in the oven for approx. 25 minutes.
- 11. Remove the baked base from the oven and carefully take out the baking paper along with the legumes.
- 12. Wash the strawberries thoroughly and remove the green leafy tops.
- 13. Slice the strawberries into thin slices.
- 14. Chop the white and dark chocolate separately into coarse pieces.
- 15. Bring about 500 ml of water to a boil in a pot.
- 16. Place a metal bowl over the hot water to create a bain-marie (water bath).
- 17. Melt the first type of chocolate in the metal bowl over the water bath.
- 18. Stir 100 ml of cream and 20 g of butter into the melted chocolate.
- 19. Repeat the process with the second type of chocolate to make the second cream.
- 20. Distribute half of the strawberry slices evenly over the baked cake base.
- 21. Let the chocolate creams cool down briefly until they thicken slightly.
- 22. Pour the chocolate creams alternately over the strawberries in the pan.
- 23. Gently drag a wooden skewer through the cream to create a marbled effect.
- 24. Place the cake in the refrigerator for at least 4 hours to set.
- 25. Garnish the finished cake with the remaining fresh strawberries.
- 26. Slice the cake and serve it.
