🥗 Quinoa Strawberry Salad with Grilled Chicken

Ingredients
- quinoa 150 g
- Salt Pinch
- Chicken breast fillets 600 g
- Spice for poultry 1 tbsp
- Olive oil 5 tbsp
- Butter 1 tbsp
- Cherry tomatoes 500 g
- Strawberries 300 g
- Basil, fresh 20 g
- Sour cream 1 tbsp
- Balsamic vinegar, light 2 tbsp
- Pepper, black ground Pinch
- Sugar Pinch
Instructions
- 1. Rinse the quinoa in a sieve under lukewarm water until the water runs clear.
- 2. Bring about 300 milliliters of salted water to a boil in a pot.
- 3. Add the quinoa to the boiling water and cover the pot.
- 4. Cook the quinoa on low heat for about 12 minutes.
- 5. Remove the pot from the heat and let the quinoa swell for another 5 minutes.
- 6. Drain the quinoa and let it cool in the sieve.
- 7. Wash the chicken and pat it dry with a kitchen towel.
- 8. Score the chicken in a diamond pattern, but do not cut all the way through to the bone.
- 9. Rub the chicken thoroughly with chicken seasoning salt.
- 10. Heat 2 tablespoons of olive oil in a pan over high heat.
- 11. Fry the chicken on all sides for about 2 to 3 minutes until golden brown.
- 12. Add 1 tablespoon of butter to the pan and reduce the heat to low.
- 13. Finish cooking the chicken covered for about 5 to 6 minutes.
- 14. Remove the pan from the heat and set the chicken aside covered.
- 15. Wash the tomatoes and halve them.
- 16. Wash the strawberries, remove the green stems, and quarter them.
- 17. Wash the basil, shake it dry, and remove the coarse stems.
- 18. Place the basil in a tall container along with 1 tablespoon of sour cream, 3 tablespoons of olive oil, 2 tablespoons of balsamic vinegar, salt, and pepper.
- 19. Blend the mixture finely into a dressing.
- 20. Season the basil dressing with salt and pepper to taste.
- 21. In a bowl, mix the tomatoes, strawberries, and cooled quinoa.
- 22. Add 1 tablespoon of olive oil, 1 tablespoon of balsamic vinegar, salt, pepper, and sugar.
- 23. Mix everything well and season the salad to taste.
- 24. Divide the strawberry salad onto plates.
- 25. Place the chicken alongside and drizzle it with the basil dressing.
- 26. Serve the salad immediately and enjoy.
