  1. 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
  2. 2. Chop the chocolate into small pieces.
  3. 3. Melt the chocolate pieces over a pot with slightly boiling water (bain-marie).
  4. 4. Let the melted chocolate cool down briefly.
  5. 5. Separate the eggs so that you have egg whites and egg yolks separately.
  6. 6. Put the egg whites in a bowl and add a pinch of salt.
  7. 7. Whip the egg whites stiff using a hand mixer.
  8. 8. Take a second bowl.
  9. 9. Mix the butter with the powdered sugar until creamy.
  10. 10. Beat the egg yolks one by one into the butter-sugar mixture.
  11. 11. Add the cooled chocolate and stir it in.
  12. 12. Sift the flour, cocoa powder, and baking powder over the mixture.
  13. 13. Mix half of the egg whites briefly with the chocolate mixture.
  14. 14. Gently fold in the remaining egg whites.
  15. 15. Grease a 26 cm (10 inch) springform pan.
  16. 16. Line the bottom of the pan with baking paper.
  17. 17. Spread the batter evenly in the prepared pan.
  18. 18. Bake the base in the oven for about 25 minutes.
  19. 19. Let the cake base cool down on a wire rack.
  20. 20. Turn the base out of the pan.
  21. 21. Peel the baking paper off the base.
  22. 22. Place a cake ring around the cooled chocolate base.
  23. 23. Wash the strawberries thoroughly.
  24. 24. Cut off the green stems from the strawberries.
  25. 25. Dice the strawberries into small cubes.
  26. 26. Soak the gelatin leaves in cold water.
  27. 27. Mix the quark (curd cheese) with the sugar and vanilla sugar.
  28. 28. Take the gelatin out of the water and let it drain well.
  29. 29. Dissolve the gelatin in a small pot over low heat (approx. 2 minutes).
  30. 30. Stir one tablespoon of the quark mixture into the dissolved gelatin.
  31. 31. Stir this mixture quickly into the remaining quark cream.
  32. 32. Place the cream in the fridge briefly until it starts to thicken.
  33. 33. Whip the cream stiff in a tall container.
  34. 34. Fold the strawberry cubes into the stiffly whipped cream.
  35. 35. Spread the quark-cream mixture evenly over the chocolate base.
  36. 36. Place the cake in the fridge for at least 4 hours to set.
  37. 37. Carefully remove the cake ring before serving.
  38. 38. Decorate the cake as you like with fresh strawberries and chocolate shavings.
  39. 39. Serve the cake and enjoy!
