  1. 1. Wash the strawberries thoroughly. Remove the green stems. Cut the berries in half.
  2. 2. Wash the lemon. Grate about one teaspoon of the zest. Cut the lemon in half. Squeeze out the juice.
  3. 3. Place the gelatin leaves in a bowl with cold water. Let them soften in the water.
  4. 4. Take cream cheese and mascarpone into a separate bowl. Add the sugar. Add the lemon zest. Add one tablespoon of lemon juice. Stir until smooth, with no lumps remaining.
  5. 5. Put the whipping cream into a tall container. Use a hand mixer with a whisk attachment. Whip the cream until stiff.
  6. 6. Take the gelatin leaves out of the water. Squeeze them well so no water remains.
  7. 7. Put the gelatin in a pot. Warm it on medium heat. Wait until it is completely liquid.
  8. 8. Take one or two tablespoons of the cream cheese cream. Stir it carefully into the liquid gelatin.
  9. 9. Pour the gelatin mixture back into the large bowl with the rest of the cream. Mix everything well.
  10. 10. Gently fold the whipped cream into the mixture. Make sure the air in the cream stays.
  11. 11. Fill the cheesecake cream into a piping bag.
  12. 12. Pipe the cream onto the center of the strawberry halves.
  13. 13. Place the filled strawberries in the refrigerator. Let them get cold for about one hour.
  14. 14. Put about 500 milliliters of water in a pot. Bring the water to a boil.
  15. 15. Chop the couverture (chocolate for coating) roughly.
  16. 16. Put the chopped chocolate in a metal bowl. Place the bowl over the hot water. Let the chocolate melt.
  17. 17. Put the melted chocolate into a piping bag.
  18. 18. Decorate the cheesecake strawberries with the chocolate.
  19. 19. Let the bites cool down briefly. Then serve them.
