🍰 Strawberry Cheesecake Bites

Ingredients
- Strawberries 400 g
- Lemons 1 pcs
- Gelatin sheets 2 pcs
- Fresh cheese, plain 100 g
- mascarpone 100 g
- Sugar 100 g
- Whipping cream 100 g
- Dark chocolate coating 100 g
Instructions
- 1. Wash the strawberries thoroughly. Remove the green stems. Cut the berries in half.
- 2. Wash the lemon. Grate about one teaspoon of the zest. Cut the lemon in half. Squeeze out the juice.
- 3. Place the gelatin leaves in a bowl with cold water. Let them soften in the water.
- 4. Take cream cheese and mascarpone into a separate bowl. Add the sugar. Add the lemon zest. Add one tablespoon of lemon juice. Stir until smooth, with no lumps remaining.
- 5. Put the whipping cream into a tall container. Use a hand mixer with a whisk attachment. Whip the cream until stiff.
- 6. Take the gelatin leaves out of the water. Squeeze them well so no water remains.
- 7. Put the gelatin in a pot. Warm it on medium heat. Wait until it is completely liquid.
- 8. Take one or two tablespoons of the cream cheese cream. Stir it carefully into the liquid gelatin.
- 9. Pour the gelatin mixture back into the large bowl with the rest of the cream. Mix everything well.
- 10. Gently fold the whipped cream into the mixture. Make sure the air in the cream stays.
- 11. Fill the cheesecake cream into a piping bag.
- 12. Pipe the cream onto the center of the strawberry halves.
- 13. Place the filled strawberries in the refrigerator. Let them get cold for about one hour.
- 14. Put about 500 milliliters of water in a pot. Bring the water to a boil.
- 15. Chop the couverture (chocolate for coating) roughly.
- 16. Put the chopped chocolate in a metal bowl. Place the bowl over the hot water. Let the chocolate melt.
- 17. Put the melted chocolate into a piping bag.
- 18. Decorate the cheesecake strawberries with the chocolate.
- 19. Let the bites cool down briefly. Then serve them.
