🍰 Strawberry Buttermilk Ice Cups

Ingredients
- Strawberries 500 g
- Buttermilk 150 ml
- Whipping cream 100 g
- Eggs 3 pcs
- Sugar 125 g
Instructions
- 1. Wash the strawberries thoroughly.
- 2. Remove the green stems from the berries.
- 3. Take 300 grams of the strawberries.
- 4. Place these berries together with the buttermilk into a tall container.
- 5. Puree the mixture until smooth.
- 6. Cut the remaining strawberries into small cubes.
- 7. Put the cream into a bowl.
- 8. Whip the cream stiffly using a hand mixer with the whisk attachment.
- 9. Bring about 500 milliliters of water to a boil in a pot.
- 10. Separate the eggs.
- 11. Use the egg whites for another purpose.
- 12. Place the egg yolks in a separate bowl.
- 13. Mix the egg yolks with the sugar.
- 14. Place the bowl over the hot water bath.
- 15. Whisk the mixture for about five minutes until it is thick and creamy.
- 16. Stir the strawberry buttermilk puree into the egg yolk mixture.
- 17. Fold in the diced strawberries.
- 18. Gently mix the whipped cream into the mass.
- 19. Line a muffin tin with paper cups.
- 20. Pour the strawberry buttermilk mixture into the cups.
- 21. Place the tin in the freezer for about one hour.
- 22. Insert wooden sticks or small spoons as handles into the cups.
- 23. Let the cups freeze completely for another three hours.
- 24. Carefully remove the ice cups from the molds before serving.
