🍲 Creamy Pea Soup with Sautéed Shrimp

Ingredients
- shrimp cooked, frozen 450 g
- onions, yellow 1 pc.
- peas, frozen 800 g
- butter 2 tbsp
- white wine, dry 150 ml
- vegetable broth 800 ml
- sea salt pinch
- pepper, black ground pinch
- oil 1 tbsp
- mint, fresh 10 g
- whipping cream 100 g
Instructions
- 1. Thaw the shrimp overnight in the refrigerator.
- 2. Halve the onion, peel it, and chop it into small cubes.
- 3. Melt the butter in a pot over medium heat.
- 4. Sauté the chopped onions together with the peas for about 5 to 6 minutes.
- 5. Deglaze the vegetables with white wine.
- 6. Add the broth and season the mixture with salt and pepper.
- 7. Let the soup simmer for about 10 minutes.
- 8. Rinse the shrimp thoroughly and pat them dry with a kitchen towel.
- 9. Heat the oil in a separate pan over medium heat.
- 10. Sauté the shrimp for about 2 to 3 minutes.
- 11. Wash the mint, shake it dry, and chop it roughly.
- 12. Puree the cooked soup until smooth.
- 13. Stir the cream into the soup and adjust the seasoning to taste.
- 14. Serve the soup in small bowls.
- 15. Garnish the bowls with the sautéed shrimp and fresh mint.
