Ingredients
- yeast, fresh 21 g
- water 20 ml
- sugar 90 g
- wheat flour, type 405 500 g
- milk 230 ml
- eggs 2 pc.
- salt 0.5 tsp
- butter 200 g
- vanilla extract 1 tsp
- powdered sugar 70 g
Instructions
- 1. Dissolve the yeast in warm water.
- 2. Stir the sugar into the yeast mixture.
- 3. Cover the bowl and place it in a warm spot.
- 4. Wait about 15 minutes until the mixture foams.
- 5. Add the flour, milk, egg yolks, and salt to the yeast mixture.
- 6. Knead the dough for about 10 minutes.
- 7. Ensure the dough becomes pliable but not too soft.
- 8. Shape the dough into a ball.
- 9. Lightly coat the dough ball with butter.
- 10. Cover the dough and let it rest for 1 hour.
- 11. Wait until the dough volume has doubled.
- 12. Lightly dust a work surface with flour.
- 13. Roll the dough out into a large rectangle.
- 14. Mix the vanilla extract with the soft butter.
- 15. Coat the dough sheet evenly with the butter mixture.
- 16. Grease a flat pizza tray (e.g., enamel) with the remaining butter mix.
- 17. Roll the coated dough sheet into a long strip.
- 18. Press the strip slightly flatter with your hands.
- 19. Wrap the strip into a snail shape.
- 20. Let the dough roll rest for 1 to 2 minutes.
- 21. Repeat resting if the dough shrinks back.
- 22. Place the finished snail on the prepared tray.
