  1. 1. Separate the eggs. Use the egg whites for another recipe.
  2. 2. Rinse the lemon under hot water.
  3. 3. Finely grate about one teaspoon of the lemon zest.
  4. 4. Mix flour, ground almonds, 50 grams of powdered sugar, vanilla sugar, and a pinch of salt well in a bowl.
  5. 5. Add the egg yolk, butter, and lemon zest to the flour mixture.
  6. 6. Knead everything into a smooth dough.
  7. 7. Let the dough rest in the refrigerator for about 30 minutes.
  8. 8. Preheat the oven to 160 degrees Celsius fan-forced.
  9. 9. Line a baking tray with baking paper.
  10. 10. Form small balls from the dough, about the size of a cherry.
  11. 11. Spread the remaining powdered sugar on a clean surface.
  12. 12. Roll the dough balls in the powdered sugar.
  13. 13. Place the balls on the baking tray with some space between them.
  14. 14. Press small indentations into the balls using the wooden handle of a cooking spoon.
  15. 15. Be careful not to pierce the balls.
  16. 16. Bake the cookies for about 15 minutes in the oven.
  17. 17. Make sure the cookies do not become too dark.
  18. 18. Remove the tray from the oven after baking.
  19. 19. Fill the indentations in the cookies with jam.
  20. 20. Let the cookies cool down completely.
  21. 21. Dust the cooled cookies with a little powdered sugar.
