🍰 Lemon Almond Balls with Jam

Ingredients
- Eggs 2 pcs.
- Lemons 1 pcs.
- Wheat flour, Type 405 150 g
- Almonds, ground 140 g
- Powdered sugar 70 g
- Vanilla sugar 2 tsp
- Salt pinch
- butter 150 g
- Strawberry jam 100 g
Instructions
- 1. Separate the eggs. Use the egg whites for another recipe.
- 2. Rinse the lemon under hot water.
- 3. Finely grate about one teaspoon of the lemon zest.
- 4. Mix flour, ground almonds, 50 grams of powdered sugar, vanilla sugar, and a pinch of salt well in a bowl.
- 5. Add the egg yolk, butter, and lemon zest to the flour mixture.
- 6. Knead everything into a smooth dough.
- 7. Let the dough rest in the refrigerator for about 30 minutes.
- 8. Preheat the oven to 160 degrees Celsius fan-forced.
- 9. Line a baking tray with baking paper.
- 10. Form small balls from the dough, about the size of a cherry.
- 11. Spread the remaining powdered sugar on a clean surface.
- 12. Roll the dough balls in the powdered sugar.
- 13. Place the balls on the baking tray with some space between them.
- 14. Press small indentations into the balls using the wooden handle of a cooking spoon.
- 15. Be careful not to pierce the balls.
- 16. Bake the cookies for about 15 minutes in the oven.
- 17. Make sure the cookies do not become too dark.
- 18. Remove the tray from the oven after baking.
- 19. Fill the indentations in the cookies with jam.
- 20. Let the cookies cool down completely.
- 21. Dust the cooled cookies with a little powdered sugar.
- 22. Serve the cookies and enjoy them.
