  1. 1. Thoroughly wash the broccoli under running water.
  2. 2. Remove the tough stalk at the bottom of the broccoli.
  3. 3. Chop the broccoli into coarse pieces.
  4. 4. Take the dates and chop them into coarse pieces as well.
  5. 5. Chop the figs into coarse pieces.
  6. 6. Heat a frying pan over medium heat.
  7. 7. Toast the cashew nuts in the dry pan for about 2 minutes.
  8. 8. Remove the roasted cashew nuts from the pan.
  9. 9. Place the cashew nuts on a plate and let them cool down briefly.
  10. 10. Put the dates into a tall container or a food processor.
  11. 11. Add the coarsely chopped figs.
  12. 12. Add the cooled cashew nuts.
  13. 13. Add the coarsely chopped broccoli to the mixture.
  14. 14. Add vanilla sugar to the mixture.
  15. 15. Add a pinch of salt to the mixture.
  16. 16. Puree all ingredients until a sticky, fine-crumbly mass forms.
  17. 17. If the mixture is too dry, add 1 to 2 tablespoons of cold water.
  18. 18. Take small portions of the mixture using a teaspoon.
  19. 19. Roll the portions into balls between your palms.
  20. 20. Roll the balls in coconut flakes until they are completely covered.
  21. 21. Store the finished energy balls in a box until you are ready to serve them.
