🍽️ Coconut Broccoli Energy Balls

Ingredients
- Broccoli 50 g
- Soft Dates, dried and pitted 50 g
- Soft Figs, dried 50 g
- Cashew nuts 50 g
- Vanilla Sugar 1 packet
- Salt pinch
- Coconut flakes 3 tbsp
Instructions
- 1. Thoroughly wash the broccoli under running water.
- 2. Remove the tough stalk at the bottom of the broccoli.
- 3. Chop the broccoli into coarse pieces.
- 4. Take the dates and chop them into coarse pieces as well.
- 5. Chop the figs into coarse pieces.
- 6. Heat a frying pan over medium heat.
- 7. Toast the cashew nuts in the dry pan for about 2 minutes.
- 8. Remove the roasted cashew nuts from the pan.
- 9. Place the cashew nuts on a plate and let them cool down briefly.
- 10. Put the dates into a tall container or a food processor.
- 11. Add the coarsely chopped figs.
- 12. Add the cooled cashew nuts.
- 13. Add the coarsely chopped broccoli to the mixture.
- 14. Add vanilla sugar to the mixture.
- 15. Add a pinch of salt to the mixture.
- 16. Puree all ingredients until a sticky, fine-crumbly mass forms.
- 17. If the mixture is too dry, add 1 to 2 tablespoons of cold water.
- 18. Take small portions of the mixture using a teaspoon.
- 19. Roll the portions into balls between your palms.
- 20. Roll the balls in coconut flakes until they are completely covered.
- 21. Store the finished energy balls in a box until you are ready to serve them.
