🍲 Cozy Mediterranean Seafood Stew

Ingredients
- yellow onions 1 pc.
- garlic cloves 1 pc.
- celery stalks 0.5 pc.
- thyme, fresh 5 g
- rosemary, fresh 5 g
- squid in sunflower oil 280 g
- olive oil 2 tbsp
- tomato paste 4 tbsp
- paprika, sweet 1 tbsp
- tomatoes, chopped 500 g
- vegetable broth 300 ml
- salt pinch
- pepper, black ground pinch
Instructions
- 1. Halve the onions and peel off the outer layers. Dice the onions into small cubes.
- 2. Peel the garlic cloves and chop them very finely.
- 3. Wash the celery stalks thoroughly. Slice them into thin rings.
- 4. Save the green leafy tops of the celery for garnishing later.
- 5. Wash the thyme and rosemary. Pat the herbs dry with a kitchen towel.
- 6. Remove the leaves from the tough stems and chop them finely.
- 7. Place the seafood in a colander and let it drain well.
- 8. Roughly chop the seafood if the pieces are very large.
- 9. Heat oil in a large pot over medium heat.
- 10. Add the onions, garlic, and celery to the pot.
- 11. Sauté the vegetables for about 4 minutes until they become translucent.
- 12. Stir in the tomato paste and paprika powder into the vegetables.
- 13. Fry the spices for about 1 minute.
- 14. Deglaze the mixture with the chopped tomatoes and broth.
- 15. Stir in the chopped herbs and the seafood.
- 16. Cover the pot and let the stew simmer for about 15 minutes.
- 17. Season the stew to taste with salt and pepper.
- 18. Serve the stew in deep plates.
- 19. Garnish the dish with the reserved fresh celery leaves.
