🍲 Hearty Stew with Chickpeas, Sweet Potatoes, and Minced Meat

Ingredients
- ginger, fresh 20 g
- garlic cloves 2 pcs.
- spring onions 1 bunch
- carrots 4 pcs.
- sweet potatoes 2 pcs.
- celery stalks 6 pcs.
- chickpeas from the can 265 g
- oil 4 tbsp
- beef mince 600 g
- cinnamon pinch
- salt pinch
- pepper, black ground pinch
- vegetable broth 1 L
Instructions
- 1. Peel the ginger and the garlic.
- 2. Finely chop the ginger and the garlic.
- 3. Wash the spring onions.
- 4. Dry the spring onions.
- 5. Cut off the root ends of the spring onions.
- 6. Slice the spring onions into rings.
- 7. Peel the carrots.
- 8. Peel the sweet potatoes.
- 9. Cut the carrots into small cubes.
- 10. Cut the sweet potatoes into small cubes.
- 11. Wash the celery stalks.
- 12. Set aside the green ends of the celery.
- 13. Dice the celery stalks.
- 14. Drain the chickpeas.
- 15. Rinse the chickpeas.
- 16. Heat oil in a pot over medium heat.
- 17. Brown the minced meat together with the garlic and ginger.
- 18. Cook the ingredients for about 4 minutes.
- 19. Season everything with cinnamon.
- 20. Season everything with salt.
- 21. Season everything with pepper.
- 22. Add the spring onions.
- 23. Add the carrots.
- 24. Add the sweet potatoes.
- 25. Add the celery stalks.
- 26. Sauté everything for another 3 minutes.
- 27. Add the chickpeas to the pot.
- 28. Stir the broth if necessary.
- 29. Pour the broth over the vegetables.
- 30. Let the stew cook covered for about 10 minutes.
- 31. Slice the reserved celery greens into thin strips.
- 32. Serve the stew onto plates.
- 33. Garnish the stew with the celery greens.
