  2. 2. Peel the garlic and cut it into fine cubes.
  3. 3. Cut the goat cheese into slices about 1 cm thick.
  4. 4. Spread the Herbs de Provence on a plate.
  5. 5. Roll the goat cheese slices in the herbs until they are coated.
  6. 6. Fill a clean jar with the drained olives, garlic, bay leaf, and peppercorns.
  7. 7. Layer the marinated goat cheese slices on top of the olive mixture.
  8. 8. Pour olive oil over everything.
  9. 9. Seal the jar tightly.
  10. 10. Let the jar sit in the refrigerator for one day to marinate.
  11. 11. Remove the goat cheese slices and olives from the jar and let them drain briefly.
  12. 12. Serve the ingredients together with rustic bread.
