🍰 Eggnog Cake with Cherries

Ingredients
- butter 250 g
- breadcrumbs 30 g
- cherries, fresh 400 g
- sugar 200 g
- vanilla sugar 20 g
- eggs 4 pcs.
- wheat flour, type 405 350 g
- baking powder 30 g
- egg liqueur 250 ml
- salt pinch
- powdered sugar 80 g
- sour cherry nectar 2 tbsp
Instructions
- 1. Preheat the oven to 180 degrees Celsius with fan.
- 2. Grease a bundt cake pan with one tablespoon of butter.
- 3. Dust the pan with breadcrumbs and shake out any excess.
- 4. Drain the cherries in a sieve.
- 5. Catch the cherry juice in a small container.
- 6. Pat the cherries dry with a kitchen towel.
- 7. Set the cherries aside.
- 8. Put butter, sugar, vanilla sugar, and eggs into a mixing bowl.
- 9. Beat the ingredients for one minute on speed 4 until frothy.
- 10. Scrape down the sides of the mixing bowl with a spatula.
- 11. Add flour, baking powder, eggnog liqueur, and a pinch of salt.
- 12. Mix everything for two minutes on speed 4.
- 13. Fold the cherries into the batter in a separate bowl.
- 14. Pour the mixture into the prepared bundt pan.
- 15. Bake the cake for about 70 minutes on the lowest rack.
- 16. Cover the pan with aluminum foil after 50 minutes.
- 17. Check the baking time with a wooden skewer.
- 18. Extend the baking time if the skewer still comes out moist.
- 19. Let the cake cool almost completely in the pan.
- 20. Turn the cake out onto a cake rack.
- 21. Mix powdered sugar with one to two tablespoons of cherry juice.
- 22. Stir the glaze until smooth.
- 23. Brush the cake with the glaze using a pastry brush.
