  1. 1. Wash the plums thoroughly, halve them, remove the pits, and cut into wedges. Separate the eggs.
  2. 2. In a bowl, cream the egg yolks with sugar, salt, and cinnamon using a hand mixer. Gradually mix in the milk and sparkling water with the flour.
  3. 3. In a separate bowl, beat the egg whites until stiff and gently fold them into the mixture.
  4. 4. Heat 1 teaspoon of butter in a pan over medium heat and sauté a quarter of the plums for about 3 minutes, turning occasionally. Then pour a quarter of the batter on top and cook the pancakes for about 3 minutes on each side.
  5. 5. Keep the finished pancakes warm and prepare the remaining ones in the same way. Serve the pancakes with plums dusted with powdered sugar. Enjoy your meal!
