🍰 Pancakes with Plums

Ingredients
- Plums 600 g
- Eggs 4 pcs
- Sugar 60 g
- Salt Pinch
- Cinnamon 1 tsp
- Milk 150 ml
- Sparkling water 150 ml
- Wheat flour, Type 405 250 g
- Butter 4 tsp
- Icing sugar 2 tbsp
Instructions
- 1. Wash the plums thoroughly, halve them, remove the pits, and cut into wedges. Separate the eggs.
- 2. In a bowl, cream the egg yolks with sugar, salt, and cinnamon using a hand mixer. Gradually mix in the milk and sparkling water with the flour.
- 3. In a separate bowl, beat the egg whites until stiff and gently fold them into the mixture.
- 4. Heat 1 teaspoon of butter in a pan over medium heat and sauté a quarter of the plums for about 3 minutes, turning occasionally. Then pour a quarter of the batter on top and cook the pancakes for about 3 minutes on each side.
- 5. Keep the finished pancakes warm and prepare the remaining ones in the same way. Serve the pancakes with plums dusted with powdered sugar.
