🍰 Egg Muffins with Feta and Spinach

Ingredients
- spinach 150 g
- onions, yellow 1 pcs
- feta 200 g
- eggs 8 pcs
- salt pinch
- pepper, black ground pinch
- oil 1 tbsp
- rye bread 4 slices
Instructions
- 1. Preheat the oven to 180 °C (convection). Wash the spinach, shake it dry and chop it finely. Halve the onion, peel it and dice it finely. Cut the feta into cubes. In a bowl, whisk the eggs well with salt and pepper.
- 2. Heat oil in a pan over medium heat and sauté the spinach together with the onions for about 3 minutes. Season with salt and pepper. Mix the spinach and feta into the eggs.
- 3. If necessary, grease the muffin tins and distribute the egg mixture evenly into 8 to 12 molds. Bake them in the oven for approx. 15 minutes, until the eggs are set. Remove them from the oven and serve with bread. Enjoy your meal!
