🍽️ Oven-Baked Eggs in Spicy Tomato Sauce

Ingredients
- vine tomatoes 6 pcs
- pepper, red 2 pcs
- onions, yellow 1 pc
- garlic cloves 1 pc
- olive oil 2 tbsp
- salt pinch
- sugar pinch
- paprika, sweet mild pinch
- cayenne pepper pinch
- vegetable broth 100 ml
- chorizo 125 g
- peas, frozen 150 g
- eggs 4 pcs
- baguette 1 pc
Instructions
- 1. Bring about 1 liter of water to a boil in a pot.
- 2. Score a cross into the top of each tomato.
- 3. Place the tomatoes in a bowl and pour the boiling water over them.
- 4. Rinse the tomatoes immediately under cold water.
- 5. Peel the skin off the tomatoes.
- 6. Halve the tomatoes and remove the seeds.
- 7. Cut the tomato flesh into coarse chunks.
- 8. Wash the bell peppers thoroughly.
- 9. Quarter the bell peppers and remove the stems and seeds.
- 10. Dice the bell peppers coarsely.
- 11. Halve the onion and peel it.
- 12. Dice the onion finely.
- 13. Peel the garlic.
- 14. Dice the garlic finely as well.
- 15. Heat the olive oil in the pot over high heat.
- 16. Sauté the onion, garlic, and bell peppers for about 4 minutes.
- 17. Add the tomato chunks and cook for another 2 minutes.
- 18. Season the sauce with salt, sugar, paprika powder, and cayenne pepper.
- 19. Stir in the broth if the mixture is too thick.
- 20. Pour the broth into the tomato mixture.
- 21. Simmer the sauce for 8 to 10 minutes until it thickens.
- 22. Taste the sauce one last time and adjust seasoning if needed.
- 23. Preheat the oven to 170 °C (convection mode).
- 24. Peel the chorizo sausage.
- 25. Slice the chorizo into rounds.
- 26. Add the peas and chorizo slices to the pot.
- 27. Spread the mixture evenly in a baking dish.
- 28. Make four indentations in the sauce using a spoon.
- 29. Crack one egg into each indentation.
- 30. Bake the eggs in the oven for about 10 minutes until the whites are set.
- 31. Remove the dish from the oven.
- 32. Let the dish cool down briefly.
- 33. Serve the eggs together with baguette.
