  1. 1. Bring about 1 liter of water to a boil in a pot.
  2. 2. Score a cross into the top of each tomato.
  3. 3. Place the tomatoes in a bowl and pour the boiling water over them.
  4. 4. Rinse the tomatoes immediately under cold water.
  5. 5. Peel the skin off the tomatoes.
  6. 6. Halve the tomatoes and remove the seeds.
  7. 7. Cut the tomato flesh into coarse chunks.
  8. 8. Wash the bell peppers thoroughly.
  9. 9. Quarter the bell peppers and remove the stems and seeds.
  10. 10. Dice the bell peppers coarsely.
  11. 11. Halve the onion and peel it.
  12. 12. Dice the onion finely.
  13. 13. Peel the garlic.
  14. 14. Dice the garlic finely as well.
  15. 15. Heat the olive oil in the pot over high heat.
  16. 16. Sauté the onion, garlic, and bell peppers for about 4 minutes.
  17. 17. Add the tomato chunks and cook for another 2 minutes.
  18. 18. Season the sauce with salt, sugar, paprika powder, and cayenne pepper.
  19. 19. Stir in the broth if the mixture is too thick.
  20. 20. Pour the broth into the tomato mixture.
  21. 21. Simmer the sauce for 8 to 10 minutes until it thickens.
  22. 22. Taste the sauce one last time and adjust seasoning if needed.
  23. 23. Preheat the oven to 170 °C (convection mode).
  24. 24. Peel the chorizo sausage.
  25. 25. Slice the chorizo into rounds.
  26. 26. Add the peas and chorizo slices to the pot.
  27. 27. Spread the mixture evenly in a baking dish.
  28. 28. Make four indentations in the sauce using a spoon.
  29. 29. Crack one egg into each indentation.
  30. 30. Bake the eggs in the oven for about 10 minutes until the whites are set.
  31. 31. Remove the dish from the oven.
  32. 32. Let the dish cool down briefly.
  33. 33. Serve the eggs together with baguette.
