Ingredients
- onions, yellow 1 pc.
- oil 1 tbsp
- tomato paste 2 tbsp
- red wine, dry 100 ml
- beef broth 500 ml
- bay leaves, dried 2 pcs.
- juniper berries 2 pcs.
- pepper, black ground 1 tsp
- cornstarch 0.5 tbsp
- salt pinch
Instructions
- 1. Halve the onions and remove the skin.
- 2. Dice the onions finely.
- 3. Heat oil in a pot on high heat.
- 4. Fry the onions for about 5 minutes until they are lightly golden brown.
- 5. Add tomato paste and roast it for about 3 minutes.
- 6. Deglaze everything with red wine and beef broth.
- 7. Add bay leaves, juniper berries, and peppercorns.
- 8. Let the dark sauce simmer on low heat for about 20 minutes.
- 9. Mix starch with 2 tablespoons of cold water in a bowl.
- 10. Add the starch mixture to the sauce.
- 11. Remove the spices from the sauce.
- 12. Let the sauce thicken on medium heat for about 5 minutes.
- 13. Stir the sauce occasionally.
- 14. Season the dark sauce with salt.
- 15. Serve the dark sauce with dark meat.
