  7. 7. Add bay leaves, juniper berries, and peppercorns.
  8. 8. Let the dark sauce simmer on low heat for about 20 minutes.
  9. 9. Mix starch with 2 tablespoons of cold water in a bowl.
  10. 10. Add the starch mixture to the sauce.
  11. 11. Remove the spices from the sauce.
  12. 12. Let the sauce thicken on medium heat for about 5 minutes.
  13. 13. Stir the sauce occasionally.
  14. 14. Season the dark sauce with salt.
  15. 15. Serve the dark sauce with dark meat.
