  1. 1. Turn on the oven to 200 degrees Celsius with top and bottom heat.
  2. 2. Wash the zucchini and cut off the ends.
  3. 3. Cut the zucchini into large pieces.
  4. 4. Halve the bell pepper and remove the stem and seeds.
  5. 5. Chop the bell pepper roughly.
  6. 6. Halve the shallots and peel them.
  7. 7. Cut the shallots into quarters.
  8. 8. Wash the tomatoes.
  9. 9. Clean the mushrooms if necessary with a kitchen towel.
  10. 10. Cut the mushrooms into quarters.
  11. 11. Crush the garlic clove with the flat side of a knife.
  12. 12. Line a baking sheet with parchment paper.
  13. 13. Spread the prepared vegetables on the tray.
  14. 14. Add olive oil, honey, salt, and pepper.
  15. 15. Mix everything well together.
  16. 16. Wash the rosemary.
  17. 17. Shake the rosemary dry.
  18. 18. Wash the lemon.
  19. 19. Slice the lemon.
  20. 20. Rinse the dorades thoroughly.
  21. 21. Pat the dorades dry with a kitchen towel.
  22. 22. Make three shallow cuts in the skin of the dorades.
  23. 23. Season the dorades inside and out with salt and pepper.
  24. 24. Stuff each dorade with three lemon slices.
  25. 25. Add a sprig of rosemary to each dorade.
  26. 26. Place the dorades on the vegetables.
  27. 27. Cook the dorades in the oven for about 25 to 30 minutes.
  28. 28. Cover the dorades with aluminum foil after about 15 minutes.
  29. 29. Remove the baking sheet from the oven.
  30. 30. Serve the dorades with the vegetables on plates.
