🍽️ Oven Dorade with Mediterranean Vegetables

Ingredients
- Zucchini 1 pc
- Pepper, red 1 pc
- Pepper, yellow 1 pc
- Shallots 2 pc
- Cherry tomatoes 250 g
- Mushrooms, brown 300 g
- Garlic cloves 1 pc
- Olive oil 2 tbsp
- Honey 1 tsp
- Salt pinch
- Pepper, black ground pinch
- Rosemary, fresh 5 g
- Lemons 1 pc
- Dorade, whole 4 pc
Instructions
- 1. Turn on the oven to 200 degrees Celsius with top and bottom heat.
- 2. Wash the zucchini and cut off the ends.
- 3. Cut the zucchini into large pieces.
- 4. Halve the bell pepper and remove the stem and seeds.
- 5. Chop the bell pepper roughly.
- 6. Halve the shallots and peel them.
- 7. Cut the shallots into quarters.
- 8. Wash the tomatoes.
- 9. Clean the mushrooms if necessary with a kitchen towel.
- 10. Cut the mushrooms into quarters.
- 11. Crush the garlic clove with the flat side of a knife.
- 12. Line a baking sheet with parchment paper.
- 13. Spread the prepared vegetables on the tray.
- 14. Add olive oil, honey, salt, and pepper.
- 15. Mix everything well together.
- 16. Wash the rosemary.
- 17. Shake the rosemary dry.
- 18. Wash the lemon.
- 19. Slice the lemon.
- 20. Rinse the dorades thoroughly.
- 21. Pat the dorades dry with a kitchen towel.
- 22. Make three shallow cuts in the skin of the dorades.
- 23. Season the dorades inside and out with salt and pepper.
- 24. Stuff each dorade with three lemon slices.
- 25. Add a sprig of rosemary to each dorade.
- 26. Place the dorades on the vegetables.
- 27. Cook the dorades in the oven for about 25 to 30 minutes.
- 28. Cover the dorades with aluminum foil after about 15 minutes.
- 29. Remove the baking sheet from the oven.
- 30. Serve the dorades with the vegetables on plates.
