🍳 Crunchy Spelt and Bacon Bread

Ingredients
- yeast, fresh 0.5 pcs
- sugar 0.5 tsp
- water 300 ml
- wheat flour, Type 405 150 g
- spelt flour, Type 630 380 g
- sea salt 1 tsp
- bacon strips 200 g
- chives, fresh 0.5 bunch
Instructions
- 1. Crumble the yeast into a small bowl.
- 2. Mix the yeast with the sugar and dissolve it in lukewarm water.
- 3. Add both types of flour and the salt to a large bowl and mix them.
- 4. Pour the yeast mixture into the flour.
- 5. Knead everything into a smooth dough.
- 6. Cover the bowl and let the dough rest in a warm place for about 60 minutes.
- 7. Wait until the dough volume has approximately doubled.
- 8. Mix the bacon with one tablespoon of spelt flour.
- 9. Wash the chives thoroughly and dry them.
- 10. Cut the chives into small rings.
- 11. Work the bacon and chives into the dough.
- 12. Shape the dough into a round loaf.
- 13. Place the loaf on a baking sheet lined with baking paper.
- 14. Cover the bread and let it rise for another 15 minutes.
- 15. Preheat the oven to 200 °C with top and bottom heat.
- 16. Lightly score the top of the bread in a cross pattern.
- 17. Bake the bread in the oven for about 10 minutes.
- 18. Reduce the oven temperature to 180 °C.
- 19. Bake the bread for another 25 to 30 minutes.
- 20. Let the bread cool completely on a wire rack.
