  1. 1. Crumble the yeast into a small bowl.
  2. 2. Mix the yeast with the sugar and dissolve it in lukewarm water.
  3. 3. Add both types of flour and the salt to a large bowl and mix them.
  4. 4. Pour the yeast mixture into the flour.
  5. 5. Knead everything into a smooth dough.
  6. 6. Cover the bowl and let the dough rest in a warm place for about 60 minutes.
  7. 7. Wait until the dough volume has approximately doubled.
  8. 8. Mix the bacon with one tablespoon of spelt flour.
  9. 9. Wash the chives thoroughly and dry them.
  10. 10. Cut the chives into small rings.
  11. 11. Work the bacon and chives into the dough.
  12. 12. Shape the dough into a round loaf.
  13. 13. Place the loaf on a baking sheet lined with baking paper.
  14. 14. Cover the bread and let it rise for another 15 minutes.
  15. 15. Preheat the oven to 200 °C with top and bottom heat.
  16. 16. Lightly score the top of the bread in a cross pattern.
  17. 17. Bake the bread in the oven for about 10 minutes.
  18. 18. Reduce the oven temperature to 180 °C.
  19. 19. Bake the bread for another 25 to 30 minutes.
  20. 20. Let the bread cool completely on a wire rack.
