  1. 1. Crack the eggs into a bowl and whisk them vigorously.
  2. 2. Add flour, salt, and sugar to the egg mixture and stir everything well.
  3. 3. Stir in the milk gradually until the batter is smooth and slightly thick.
  4. 4. Rinse the blueberries thoroughly and let them drain well.
  5. 5. Mix the quark with the honey in a separate bowl.
  6. 6. Gently fold the drained blueberries into the quark-honey mixture.
  7. 7. Heat 1 tablespoon of oil in a non-stick pan over medium heat.
  8. 8. Pour a ladle of batter into the hot pan and tilt it to spread the batter evenly.
  9. 9. Cook the crepe for about 1 to 2 minutes until it turns golden brown and firms up.
  10. 10. Carefully flip the crepe and cook the other side for another 1 minute until golden brown.
  11. 11. Set the finished crepe aside and repeat the process with the remaining batter.
  12. 12. Spread the spelt crepes with the blueberry quark as desired.
