🍳 Spelt Crepes with Blueberry Quark

Ingredients
- Eggs 4 pcs.
- Spelt flour, Type 1050 200 g
- Salt pinch
- Brown sugar 30 g
- Milk 400 ml
- Blueberries, fresh 300 g
- Quark 40% fat in dry matter 250 g
- Honey 1 tsp
- Rapeseed oil 4 tbsp
Instructions
- 1. Crack the eggs into a bowl and whisk them vigorously.
- 2. Add flour, salt, and sugar to the egg mixture and stir everything well.
- 3. Stir in the milk gradually until the batter is smooth and slightly thick.
- 4. Rinse the blueberries thoroughly and let them drain well.
- 5. Mix the quark with the honey in a separate bowl.
- 6. Gently fold the drained blueberries into the quark-honey mixture.
- 7. Heat 1 tablespoon of oil in a non-stick pan over medium heat.
- 8. Pour a ladle of batter into the hot pan and tilt it to spread the batter evenly.
- 9. Cook the crepe for about 1 to 2 minutes until it turns golden brown and firms up.
- 10. Carefully flip the crepe and cook the other side for another 1 minute until golden brown.
- 11. Set the finished crepe aside and repeat the process with the remaining batter.
- 12. Spread the spelt crepes with the blueberry quark as desired.
