  1. 1. Crumble the yeast into a bowl and dissolve with sugar in lukewarm water. Let rest covered for about 10 minutes.
  2. 2. Coarsely chop the walnuts. Add flour, salt, and yogurt to the yeast water and knead everything into a stiff dough. Knead the nuts into the dough. Let the dough rise covered in a warm place for approx. 30 minutes.
  3. 3. Preheat the oven to 220 °C (convection). Knead the dough briefly again and distribute evenly among the 12 greased cups of a muffin tin. Let rise for another approx. 10 minutes. Then bake in the oven for approx. 25–30 minutes until golden brown. Let cool and remove from the molds.
  4. 4. Enjoy the spelt bread muffins with walnuts lukewarm or cold. Bon appétit!
