🍽️ Spelt Bread Muffins with Walnuts

Ingredients
- Yeast, fresh 0.5 pcs
- Brown sugar Pinch
- Water 400 ml
- Walnut kernels 75 g
- Spelt flour, Type 630 500 g
- Salt Pinch
- Yogurt, plain 100 g
- Rapeseed oil 1 tbsp
Instructions
- 1. Crumble the yeast into a bowl and dissolve with sugar in lukewarm water. Let rest covered for about 10 minutes.
- 2. Coarsely chop the walnuts. Add flour, salt, and yogurt to the yeast water and knead everything into a stiff dough. Knead the nuts into the dough. Let the dough rise covered in a warm place for approx. 30 minutes.
- 3. Preheat the oven to 220 °C (convection). Knead the dough briefly again and distribute evenly among the 12 greased cups of a muffin tin. Let rise for another approx. 10 minutes. Then bake in the oven for approx. 25–30 minutes until golden brown. Let cool and remove from the molds.
- 4. Enjoy the spelt bread muffins with walnuts lukewarm or cold. Bon appétit!
