  1. 1. Mix the veal mince in a bowl with salt and pepper.
  2. 2. Set the meat mixture aside to let it reach room temperature.
  3. 3. Roughly chop two tablespoons of roasted onions.
  4. 4. Separate the eggs by separating the yolk from the white.
  5. 5. Put the egg yolk, vinegar, mustard, salt, and pepper into a tall container.
  6. 6. Mix the ingredients with a hand blender.
  7. 7. Add the sunflower oil drop by drop while continuing to mix.
  8. 8. Once the mayo thickens, pour in the rest of the oil in a thin stream.
  9. 9. Fold the chopped roasted onions into the finished mayo.
  10. 10. Season the mayo with salt and pepper if needed.
  11. 11. Shape the mince into four equally thick burger patties.
  12. 12. Heat oil in a frying pan on high heat.
  13. 13. Fry the patties on all sides for about three to four minutes until crispy.
  14. 14. Slice the truffle cheese.
  15. 15. Remove the cooked patties from the pan.
  16. 16. Place the cheese slices on the meat to melt.
  17. 17. Add one tablespoon of butter to the pan drippings.
  18. 18. Melt the butter on medium to high heat.
  19. 19. Halve the burger buns.
  20. 20. Toast the cut side of the buns for about one minute until golden brown in the fat.
  21. 21. Wash the lamb's lettuce.
  22. 22. Spin the salad dry.
  23. 23. Spread the roasted onion mayo on the bun halves.
  24. 24. Top the buns with salad, the meat and cheese patty, and the remaining roasted onions.
  25. 25. Serve the burgers on plates.
