🍽️ Luxury Burger with Truffle Cheese and Roasted Onion Mayo

Ingredients
- Veal mince 600 g
- Salt pinch
- Pepper, black ground pinch
- Roasted onions 6 tbsp
- Eggs 2 pcs
- Vinegar 0.5 tsp
- Mustard 1 tsp
- Sunflower oil 200 ml
- Oil 2 tbsp
- Soft cheese w. truffle 180 g
- Butter 1 tbsp
- Hamburger buns 4 pcs
- Corn salad mix 100 g
Instructions
- 1. Mix the veal mince in a bowl with salt and pepper.
- 2. Set the meat mixture aside to let it reach room temperature.
- 3. Roughly chop two tablespoons of roasted onions.
- 4. Separate the eggs by separating the yolk from the white.
- 5. Put the egg yolk, vinegar, mustard, salt, and pepper into a tall container.
- 6. Mix the ingredients with a hand blender.
- 7. Add the sunflower oil drop by drop while continuing to mix.
- 8. Once the mayo thickens, pour in the rest of the oil in a thin stream.
- 9. Fold the chopped roasted onions into the finished mayo.
- 10. Season the mayo with salt and pepper if needed.
- 11. Shape the mince into four equally thick burger patties.
- 12. Heat oil in a frying pan on high heat.
- 13. Fry the patties on all sides for about three to four minutes until crispy.
- 14. Slice the truffle cheese.
- 15. Remove the cooked patties from the pan.
- 16. Place the cheese slices on the meat to melt.
- 17. Add one tablespoon of butter to the pan drippings.
- 18. Melt the butter on medium to high heat.
- 19. Halve the burger buns.
- 20. Toast the cut side of the buns for about one minute until golden brown in the fat.
- 21. Wash the lamb's lettuce.
- 22. Spin the salad dry.
- 23. Spread the roasted onion mayo on the bun halves.
- 24. Top the buns with salad, the meat and cheese patty, and the remaining roasted onions.
- 25. Serve the burgers on plates.
