🍰 Date and Almond Truffles

Ingredients
- almonds, whole 100 g
- soft dates, dried and pitted 200 g
- yogurt, plain 200 g
- chocolate, dark 100 g
- hazelnut kernels, chopped and roasted 100 g
- cinnamon 1 tsp
- salt pinch
- lemons 0.5 pc.
- orange paste 1 tsp
- oat flakes, fine 150 g
- cocoa powder 100 g
Instructions
- 1. Put the almonds into a blender and grind them into fine flour. If you already have ground almonds, skip this step.
- 2. Add the dates to the blender. If they are too firm, add a little natural yogurt to help blend them. Puree the dates until you have a soft mixture.
- 3. Break the dark chocolate into small pieces. Melt the chocolate pieces either in the microwave or over a bowl of warm water until liquid.
- 4. Pour the cocoa powder into a shallow dish or tray and set it aside.
- 5. Squeeze the lemon to extract the juice.
- 6. Add the ground almonds, the date mixture, the melted chocolate, and the lemon juice into a large mixing bowl.
- 7. Work all the ingredients in the bowl vigorously with your hands until a homogeneous, moldable mass forms.
- 8. Take small portions of the mixture using a small spoon or a portioning scoop.
- 9. Shape each portion into a smooth ball using your hands.
- 10. Gently roll each ball in the prepared cocoa until they are completely covered.
- 11. Place the finished truffles on a tray and put them in the refrigerator, covered, to let them set.
- 12. Store the truffles covered in the refrigerator. They will keep for 3 to 4 days.
