  1. 1. Put the almonds into a blender and grind them into fine flour. If you already have ground almonds, skip this step.
  2. 2. Add the dates to the blender. If they are too firm, add a little natural yogurt to help blend them. Puree the dates until you have a soft mixture.
  3. 3. Break the dark chocolate into small pieces. Melt the chocolate pieces either in the microwave or over a bowl of warm water until liquid.
  4. 4. Pour the cocoa powder into a shallow dish or tray and set it aside.
  5. 5. Squeeze the lemon to extract the juice.
  6. 6. Add the ground almonds, the date mixture, the melted chocolate, and the lemon juice into a large mixing bowl.
  7. 7. Work all the ingredients in the bowl vigorously with your hands until a homogeneous, moldable mass forms.
  8. 8. Take small portions of the mixture using a small spoon or a portioning scoop.
  9. 9. Shape each portion into a smooth ball using your hands.
  10. 10. Gently roll each ball in the prepared cocoa until they are completely covered.
  11. 11. Place the finished truffles on a tray and put them in the refrigerator, covered, to let them set.
  12. 12. Store the truffles covered in the refrigerator. They will keep for 3 to 4 days.
