  1. 1. Warm 90 milliliters of milk in a pot over low heat.
  2. 2. Stir 10 grams of sugar and the crumbled yeast into the warm milk.
  3. 3. Let the milk-yeast mixture rest for about 10 minutes.
  4. 4. Melt 25 grams of butter in a pan.
  5. 5. Let the melted butter cool down briefly.
  6. 6. Knead the yeast milk, flour, 15 grams of sugar, 1 egg, salt, and the cooled butter into a smooth dough.
  7. 7. Cover the dough and let it rise in a warm place for about 1 hour.
  8. 8. Work the dough briefly on a lightly floured surface.
  9. 9. Shape the dough into a roll.
  10. 10. Cut the roll into 8 equal pieces.
  11. 11. Shape each piece into a half-round ball.
  12. 12. Cover the balls and let them rise for another 30 minutes.
  13. 13. Bring the remaining milk and sugar to a boil in a large pot with the lid on.
  14. 14. Place the dumplings in the pot with some space between them.
  15. 15. Steam the dumplings covered over medium heat for about 20 minutes.
  16. 16. Wait until a light brown crust has formed at the bottom of the pot.
  17. 17. Prepare the coffee if you haven't already.
  18. 18. Separate 4 eggs and use the yolks for another recipe.
  19. 19. Whip the cream in a bowl until stiff.
  20. 20. Place the whipped cream in the fridge to cool.
  21. 21. Mix the egg yolks, sugar, vanilla sugar, and coffee in a heatproof bowl.
  22. 22. Bring water to a boil in another pot.
  23. 23. Place the bowl with the egg mixture over the hot water (bain-marie).
  24. 24. Whip the zabaglione over the water bath for about 5 minutes until creamy.
  25. 25. Remove the bowl from the water bath.
  26. 26. Continue whipping the mixture for another 2 minutes.
  27. 27. Gently fold the cold cream into the zabaglione.
  28. 28. Serve the dumplings on plates.
  29. 29. Add the coffee zabaglione.
  30. 30. Sprinkle the dumplings with a little powdered sugar.
