🥤 Steamed Dumplings with Coffee Zabaglione

Ingredients
- milk 160 ml
- sugar 145 g
- yeast, fresh 10 g
- butter 50 g
- wheat flour, type 405 250 g
- eggs 5 pcs.
- salt pinch
- coffee 100 ml
- whipping cream 100 g
- vanilla sugar 1 tbsp
- powdered sugar 1 tbsp
Instructions
- 1. Warm 90 milliliters of milk in a pot over low heat.
- 2. Stir 10 grams of sugar and the crumbled yeast into the warm milk.
- 3. Let the milk-yeast mixture rest for about 10 minutes.
- 4. Melt 25 grams of butter in a pan.
- 5. Let the melted butter cool down briefly.
- 6. Knead the yeast milk, flour, 15 grams of sugar, 1 egg, salt, and the cooled butter into a smooth dough.
- 7. Cover the dough and let it rise in a warm place for about 1 hour.
- 8. Work the dough briefly on a lightly floured surface.
- 9. Shape the dough into a roll.
- 10. Cut the roll into 8 equal pieces.
- 11. Shape each piece into a half-round ball.
- 12. Cover the balls and let them rise for another 30 minutes.
- 13. Bring the remaining milk and sugar to a boil in a large pot with the lid on.
- 14. Place the dumplings in the pot with some space between them.
- 15. Steam the dumplings covered over medium heat for about 20 minutes.
- 16. Wait until a light brown crust has formed at the bottom of the pot.
- 17. Prepare the coffee if you haven't already.
- 18. Separate 4 eggs and use the yolks for another recipe.
- 19. Whip the cream in a bowl until stiff.
- 20. Place the whipped cream in the fridge to cool.
- 21. Mix the egg yolks, sugar, vanilla sugar, and coffee in a heatproof bowl.
- 22. Bring water to a boil in another pot.
- 23. Place the bowl with the egg mixture over the hot water (bain-marie).
- 24. Whip the zabaglione over the water bath for about 5 minutes until creamy.
- 25. Remove the bowl from the water bath.
- 26. Continue whipping the mixture for another 2 minutes.
- 27. Gently fold the cold cream into the zabaglione.
- 28. Serve the dumplings on plates.
- 29. Add the coffee zabaglione.
- 30. Sprinkle the dumplings with a little powdered sugar.
