🍰 Coconut-Cocoa Cups with Kajmak Filling

Ingredients
- butter 150 g
- sugar 120 g
- salt pinch
- vanilla extract 2 tsp
- eggs 2 pcs
- wheat flour, type 405 220 g
- cocoa powder 25 g
- baking powder 1 tsp
- milk 200 g
- chocolate, dark 300 g
- coconut flakes 200 g
- kajmak 200 g
Instructions
- 1. Preheat the oven to 170 degrees Celsius using hot air mode.
- 2. Line three perforated baking sheets with baking paper or baking foil.
- 3. Melt 150 grams of butter in the microwave or in a small saucepan.
- 4. Add the melted butter, 150 grams of sugar, a pinch of salt, 1 teaspoon of vanilla extract, the eggs, the flour, the cocoa powder, the cocoa, 1 teaspoon of baking powder, and 100 grams of milk to a blender.
- 5. Blend the ingredients until a smooth dough forms.
- 6. Alternatively, use a hand mixer or a whisk to stir the dough.
- 7. Portion the dough into even balls using an ice cream scoop.
- 8. Place the dough portions on the prepared trays with enough space between them.
- 9. Bake the trays in the oven for about 9 minutes.
- 10. Remove the cups from the oven once they have formed small domes.
- 11. Bring 100 grams of milk and 100 grams of butter to a brief boil in a saucepan.
- 12. Roughly chop the chocolate.
- 13. Turn off the heat.
- 14. Add the chopped chocolate to the hot milk and butter mixture.
- 15. Let the chocolate sit in the warm liquid for one minute.
- 16. Stir the chocolate with a whisk until a smooth glaze forms.
- 17. Pour the chocolate glaze into a deep plate.
- 18. Place the coconut flakes in a second, separate plate.
- 19. Carefully coat the cooled cups with the chocolate glaze.
- 20. Roll the glazed cups in the coconut flakes.
- 21. Place the cups on a wire rack or a plate to allow the glaze to set.
- 22. Put the cups in the refrigerator for 15 minutes.
- 23. Mix the kajmak with 1 teaspoon of vanilla extract.
- 24. Place a portion of the kajmak filling on the bottom of one cup.
- 25. Spread the filling evenly almost to the edge.
- 26. Gently press a second cup on top to form a complete cup.
- 27. Store the finished cups covered in the refrigerator.
- 28. The cups will keep in the refrigerator for about three days.
