🍽️ Crunchy Ciabatta Crostini with Fresh Cherry Tomatoes and Mozzarella

Ingredients
- Mozzarella 2 pcs
- Cherry tomatoes 200 g
- Basil, fresh 30 g
- Ciabatta bread 1 pc
- Olive oil 2 tbsp
- Salt pinch
- Pepper, black ground pinch
Instructions
- 1. Preheat the oven to 200 degrees Celsius conventional heat or 180 degrees Celsius fan-assisted.
- 2. Thoroughly wash the cherry tomatoes under running water.
- 3. Cut the washed tomatoes into small quarters.
- 4. Rinse the fresh basil and gently pat it dry with a kitchen towel.
- 5. Gently pluck the soft leaves off the tough stems.
- 6. Finely chop the basil leaves with a knife.
- 7. Slice the mozzarella into even slices.
- 8. Cut the ciabatta bread into thick slices.
- 9. Place the ciabatta slices on a baking sheet.
- 10. Toast the bread in the preheated oven for about three minutes.
- 11. Turn the slices over and toast the other side for another three minutes as well.
- 12. Remove the baking sheet with the lightly toasted bread from the oven.
- 13. Place the tomato quarters into a large mixing bowl.
- 14. Add the chopped basil leaves to the tomatoes.
- 15. Drizzle some olive oil over the tomato mixture.
- 16. Season the mixture with a pinch of salt.
- 17. Add freshly ground black pepper.
- 18. Mix all ingredients in the bowl thoroughly together.
- 19. Spread the tomato-basil mixture evenly over the ciabatta slices.
- 20. Place a slice of mozzarella on each topped ciabatta half.
- 21. Place the baking sheet with the topped crostini back into the oven.
- 22. Bake the crostini for about eight minutes.
- 23. Remove the baking sheet as soon as the cheese is melted and slightly golden brown.
- 24. Season the finished crostini again generously with black pepper.
- 25. Serve the warm crostini immediately on a plate.
