  1. 1. Pour some oil into a pan and heat it over medium heat.
  2. 2. Slice the ciabatta bread into thin pieces.
  3. 3. Fry the bread slices for about 2 minutes until golden brown.
  4. 4. Take the trout fillet and mash it into small pieces using a fork.
  5. 5. Place the mashed trout and the cream cheese into a tall container.
  6. 6. Blend the mixture with a hand blender until smooth.
  7. 7. Stir the sour cream into the trout cream.
  8. 8. Season the cream with salt and pepper to taste.
  9. 9. Place the trout cream in the refrigerator to cool down.
  10. 10. Wash the cherry tomatoes under running water.
  11. 11. Cut the washed cherry tomatoes into quarters.
  12. 12. Wash the chives and shake them dry.
  13. 13. Cut the dry chives into fine rings.
  14. 14. Spread the cold trout cream onto the toasted ciabatta slices.
  15. 15. Place the tomato quarters on top of the cream-covered slices.
  16. 16. Sprinkle some pepper over the tomatoes.
  17. 17. Garnish the crostini with the cut chive rings.
