  1. 1. Cut the onions in half, peel them, and slice them into wedges.
  2. 2. Heat the butter in a frying pan over medium heat.
  3. 3. Add the onion wedges to the pan and sauté them for about three minutes until they are soft and translucent.
  4. 4. Sprinkle the sugar over the onions and let them caramelize slightly.
  5. 5. Deglaze the onions with the wine and the vinegar.
  6. 6. Season the mixture with salt and pepper.
  7. 7. Let the onions simmer for about five minutes until the liquid has evaporated.
  8. 8. Remove the pan from the heat and let the onions cool down.
  9. 9. Preheat the oven to 180 degrees Celsius with top and bottom heat.
  10. 10. Slice the bread into even slices.
  11. 11. Cut the blue cheese into slices first, and then into small strips.
  12. 12. Distribute the cut cheese strips and the cooled red wine onions over the bread slices.
  13. 13. Place the topped bread slices in the oven and bake them for about three minutes until the cheese is melted.
  14. 14. Carefully remove the crostini from the oven.
  15. 15. Serve the crostini immediately while still hot.
