  3. 3. Pour in the milk and bring the mixture to a boil while stirring constantly.
  4. 4. Season the sauce with salt, pepper, and grated nutmeg.
  5. 5. Cut the Serrano ham into small cubes.
  6. 6. Grate the Manchego cheese coarsely.
  7. 7. Fold the ham and cheese into the hot sauce.
  8. 8. Let the mixture cool down.
  9. 9. Place the bowl in the refrigerator for about 2 hours until the mixture is firm.
  10. 10. Fill a shallow plate with breadcrumbs.
  11. 11. Whisk the eggs in a second shallow plate.
  12. 12. Put 3 tablespoons of flour into a third shallow plate.
  13. 13. Lightly dust your hands with flour.
  14. 14. Shape small rolls from the cooled mixture that are about 2 centimeters thick.
  15. 15. Coat the croquettes in the flour first.
