🍽️ Crispy Ham Croquettes

Ingredients
- butter 6 tbsp
- olive oil 2 tbsp
- wheat flour, Type 405 120 g
- milk 300 ml
- salt pinch
- pepper, black ground pinch
- nutmeg, ground pinch
- Serrano ham 50 g
- Manchego 50 g
- breadcrumbs 150 g
- eggs 2 pcs
- frying oil 1 L
Instructions
- 1. Heat butter and olive oil in a pot over medium heat.
- 2. Stir in the flour gradually until you have a smooth paste.
- 3. Pour in the milk and bring the mixture to a boil while stirring constantly.
- 4. Season the sauce with salt, pepper, and grated nutmeg.
- 5. Cut the Serrano ham into small cubes.
- 6. Grate the Manchego cheese coarsely.
- 7. Fold the ham and cheese into the hot sauce.
- 8. Let the mixture cool down.
- 9. Place the bowl in the refrigerator for about 2 hours until the mixture is firm.
- 10. Fill a shallow plate with breadcrumbs.
- 11. Whisk the eggs in a second shallow plate.
- 12. Put 3 tablespoons of flour into a third shallow plate.
- 13. Lightly dust your hands with flour.
- 14. Shape small rolls from the cooled mixture that are about 2 centimeters thick.
- 15. Coat the croquettes in the flour first.
- 16. Then dip them into the egg mixture.
- 17. Finally, roll the croquettes in the breadcrumbs.
- 18. Heat oil in a pot on the highest setting.
- 19. Fry the croquettes in batches in the hot oil.
- 20. Cook them for about 2 minutes until they are crispy.
- 21. Remove the croquettes from the oil.
- 22. Let them drain on kitchen paper.
