  2. 2. Slice the shallots into thin rings.
  3. 3. Finely chop the garlic.
  4. 4. Peel the ginger and grate it finely.
  5. 5. Crush the star anise and peppercorns in a mortar.
  6. 6. Add the chili flakes, paprika powder, sugar, grated ginger, and soy sauce to a bowl.
  7. 7. Mix the spices in the bowl thoroughly.
  8. 8. Heat the oil in a pot to 170 degrees Celsius.
  9. 9. Fry the shallots and garlic in the hot oil for about 1 to 2 minutes.
  10. 10. Be careful as the oil may foam up.
  11. 11. Pour the hot oil over the spice mixture.
  12. 12. Stir everything well.
  13. 13. Let the oil cool down slightly.
  14. 14. Fill the chili oil into jars while it is still hot.
  15. 15. Seal the jars tightly.
