🍽️ Herb Minced Meat Crespelle

Ingredients
- butter 3 tbsp
- milk 300 ml
- eggs 2 pcs
- wheat flour, type 405 125 g
- salt pinch
- onions, yellow 1 pcs
- mushrooms, white 150 g
- oil 1 tbsp
- minced meat, mixed 400 g
- pepper, black ground pinch
- parsley, fresh 20 g
- crème fraîche 100 g
- Gruyere cheese in a block 90 g
Instructions
- 1. Melt 1 tablespoon of butter in a small pot over low heat.
- 2. Whisk the melted butter in a bowl with the milk and eggs.
- 3. Add flour and salt and mix everything into a smooth batter.
- 4. Let the batter rest for 20 minutes.
- 5. Halve and peel the onions.
- 6. Dice the onions finely.
- 7. Clean the mushrooms if necessary with a kitchen towel.
- 8. Chop the mushrooms finely.
- 9. Heat 2 tablespoons of oil in a pan over high heat.
- 10. Sauté the mushrooms for about 5 minutes until the moisture has evaporated.
- 11. Add the onions and sauté them for another 2 to 3 minutes.
- 12. Add the minced meat.
- 13. Cook the meat for about 7 more minutes until crumbly and browned.
- 14. Season the filling generously with salt and pepper.
- 15. Let the filling cool down.
- 16. Grease a large pan with a bit of butter.
- 17. Heat the pan.
- 18. Pour one-sixth of the crepe batter into the pan.
- 19. Swirl the pan to spread the batter thinly.
- 20. Cook the crepe for 1 to 2 minutes on each side.
- 21. Slide the finished crepe onto a plate.
- 22. Repeat the process with the remaining batter.
- 23. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 24. Wash the parsley.
- 25. Dry the parsley thoroughly.
- 26. Pluck the parsley leaves off the stems.
- 27. Chop the parsley leaves.
- 28. Mix the herbs in a bowl with the crème fraîche.
- 29. Fold the herb cream mixture into the cooled minced meat.
- 30. Adjust the seasoning of the filling if necessary.
- 31. Spread the filling onto the crepes.
- 32. Roll up the filled crepes.
- 33. Place the crespelle side by side in a greased baking dish.
- 34. Remove the rind from the cheese.
- 35. Grate the cheese.
- 36. Sprinkle the cheese evenly over the crespelle.
- 37. Bake the crespelle in the oven for about 25 minutes until golden brown.
- 38. Take the finished crespelle out of the oven.
- 39. Serve the dish.
